Thank you for your service! When My Uncle returned from Vietnam 1967 (E7, 1/5 Mech 25th Inf) he was at home with my Grandparents for 2 days and left for Big Bend...for a month alone. Still had bad dreams for awhile, but felt acclimated to be around people. Keep gettin those boots dirty, lean on her and the dogs, it will be alright. You're ok now...GOD Bless. 🙂

Cool, overcast days are the best times for a campfire! The sweet smell of the wood fills the air. Creatures stirring about as lunch sizzles on the fire. Then, as you lay resting in your tent, the steady rain on your roof, the distant trumpet of an elk. Then just as you’re drifting off to sleep, the heavy snap of a twig right outside your tent!!

I was in the mountains there, just 3 miles south of cloudcroft, on pumphouse road I think or rd. 5661, up almost 9000 ft, ya it was back in July and the weather was so wonderful, better than The 100’s back in Oklahoma. I learned of cloudcroft through this channel, so thanks, James and Cuervo.

Ok… I’m cooking your Jambalaya tonight! : ) My plan is to sauté in a skillet, the onions, celery, maybe some carrots and just a few chopped chilies in some butter and avocado oil to get some flavor going. Then add the water and the Jambalaya rice to the skillet, bring it up to a boil and let it simmer until the rice is done. I will adjust the seasoning then. I’ll let you know how it turns out! : )

Follow up! There is a certain amount of seasoning, even a little heat in the rice, but if you like “hot” you might now notice much heat. Instead of adjusting the seasoning after it had cooked, I did tossed the veggies with some Fiesta Fajita Seasoning, O’Bay and 2-3 shakes of black pepper, before sautéing. That produced a nice heat, not over powering. I had meant to include bell pepper in the veggies, but forgot. Oh well… Use what veggies you like. Maybe even some corn would be tasty in this. 🤷‍♀️ I had to add more water to the rice about 2/3 way through cooking, even at a low simmer. I was thinking that if you needed to conserve your water, or if you are culinary daring, add that additional liquid using beer. Why not? Just enough to taste. : ) Folks who cook with Disco’s sometimes add beer to their Discada! The rice box suggested that you can use a variety of meats, sausages, chicken, ham, etc. I used smoked sausage this time, but I think any of those types of sausages would work great. Use whatever suits your taste. : ) Oh… instead of adding sliced up jalapeño or other chilies, I added some pico de gallo. I had it on hand. It worked for the Old Fart and I. : ) How was this Jambalaya? It was pretty dang good! Definitely worth trying! : ) And yeah, it would make a great camping meal!
