I won't lie chef, my sister/brother-in-law invited me and my partner to travel with them to Japan next year and I am covertly trying to convince them to do Vietnam instead. :P This year we all went to Scotland together and I played some of your videos during down time at our AirBnB. The seed has been planted... I want to experience Vietnam above any other country. All thanks to you.

Hey, if u want to cook the beef faster next time. I'd suggest u to buy a "nồi áp suất" in that way you will save so much time on cooking those bad boys

I buy evaporated and condensed coconut milk at my local Chinese/SE Asian wholesaler for the sweetness aspect. Evaporated is great in coffee...

Suggestion for butter kho quẹt, when you mixing butter throw some fresh minced garlic (not so much, fresh garlic really strong) and abit white pepper. Or u can actually use from fried garlic bit mixing into the butter it gonna pump the flavor alot but the downside is fried garlic will overpower the flavor of kho quẹt. It's up to you taste. Also not much people know but you actually can tender the beef in baking soda solution, that gonna cut off the time of cooking.

There are rules Cooking Vietnamese dishes. First, avoid rushing or shorten the process that is to say Vietnamese slow cook is famous.

I think it's best not to use oil when frying mushrooms. Especially if you're trying to build that 'dark flavor'. The mushroom will just soak it all up

@@user-wg4ie9pb3x Nothing. You put the mushrooms in when the pan is hot. Then the mushrooms will release moisture on it's own while developing flavors. Remove mushrooms and add to stew later. They will absorb a lot of that stew and will make for a better experience. You don't wanna bite into little sponges of oil

Yes just water, trying to replicate a steam injected oven and yes this is done to make it crispier
