The reason why the LCD broke was because of the shock sent through it after it hit the ground. While the phone itself survived without being deformed too badly, the physical deceleration from 30 metres to sea level in a few seconds caused the chemicals inside the LCD to basically rupture out into the body of the screen, causing it to become destroyed.

Yeah, one thing you might forget is that the internal components of many electronics can't handle extremely vigorous jolts or vibrations. To survive a 100 ft drop, you would need a material that absorbed close to 100% of the impact from the fall while at the same time being able to retain its shape to avoid the substance separating from one iPhone.
