@daniellapersad13552 жыл бұрын
This is a good attempt but actual milk chocolate needs firstly cocoa beans that are yes fermented then it needs to be dried in the sun and then roasted. After roasting remove shells and they need to be grinder using either a melanger or even a stoner grinder to refine the particles into a smooth and silky texture that rolls across the tongue eventually adding in your sugar and milk powder and continuing grinding for several hours and then boiled at a very high heat to smoothen even more and to temper so it won’t melt at room temperature but will melt when it hits the tongue. The reason not to use the blender or processed is because instead of grinding, it slices. Hope you try it this way soon, love your videos though! Lots of love from Trinidad❤️

@@kawaiiplastic5808 you need to reread what she said. This woman did not use a melanger (?), boil the chocolate, etc.
@adamwatson91122 жыл бұрын
@@kawaiiplastic5808 No, she didn’t. The method she used in the video is something you could relatively easily do at home butttt for actual smooth chocolate you need to use a grinder of some sort for several hours to make the particle size much much smaller than your blender or food processor can achieve. The chocolate is noticeably more gritty when using just a blender to make your chocolate. That’s why most professional chocolatiers and chocolate factories will have a form of roller that rolls over the chocolate for several hours every day to achieve a smooth texture. You can buy home stone grinders for making chocolate, but they can be quite pricey and if you’re just doing a one off project, and you don’t mind the gritty texture then a blender will suit just fine.

Thank you for making it make sense. A lot of cacao bean videos extravaganize the process to the point where it seems complex. I totally understood the way you showed us
@katerinachelmis56810 ай бұрын
She skipped tempering which means it melts at room temp. If you keep it in the fridge no problem you can totally get away with it. She also opted to use a food processor and not a wet grinder. I understand why she would. Most people don’t want to buy another piece of expensive kitchen equipment just to use on one or two things. However you see that the chocolate isn’t very smooth? You’re going to feel that on your tongue, it won’t come off as melty smooth and creamy like you’d expect and probably never make chocolate again. So yeah the wet grinder is important. That being said tempering isn’t complicated you just bring the chocolate up to a specific temperature and agitate it till it comes down to a specific temp. I really just highly recommend if you try to make chocolate at home you get a wet grinder. They’re super easy to use. Just put the beans and sugar in, turn it on and walk away for a few hours. Additionally to make the process even easier kitchenaide makes a precise heat mixing bowl that has a chocolate tempering setting. Here are the instructions on how to use it for chocolate producthelp.kitchenaid.com/Countertop_Appliances/Stand_Mixer_Attachments/Sweets_and_Desserts/Precise_Heat_Mixing_Bowl/How_to_Use_the_Temper_Mode_-_Precise_Heat_Mixing_Bowl
