I think the problem might be that the engine is above the center of mass, so it presses the nose down. Maybe if you point the engine down by like 5°, you can rotate easier.

It won't "fly" perse, but it will GLIDE to an airport within 60 minutes of being the final engine operating. It certainly wouldn't take off with passengers and luggage and full tank on board with just one engine, even if it was the center tail engine to balance out thrust. It will require TWO engines at a minimum and both would need to be the engines over the wings and it will use the entire runway to do it.

The one engine pushed the plane down, you need to make it parralel with the ground. You can see that while landing, the engine pushed it down and the MD-11 could have glided itself to the rw. Maybe try that. LG :)
