Otherwise, many people umami-commonly recognized as the fifth taste-with MSG (monosodium glutamate), which could be seen as a more suitable answer. Additionally, aged cheeses, Anchovies, dried mushrooms are also known for their umami flavor. Regards.

For the question for which the answer was soya sauce, I think MSG fits the answer for both clue1 and clue2. While MSG is less saltier in taste than soya sauce it is salty nonetheless and carries the umami flavor. Additionally, by this definition of taste of MSG - "MSG has a salty flavor, but it also has an umami taste, which is a savory, meaty flavor" - it seems to very aptly also fit into an answer for clue2. Just saying.
