Whenever you encounter the "Country Pursuits" mission in Chapter 4, you HAVE TO use a gun to shoot the bull gator, but you can just shoot in the general direction he's in. There's also not a specific number of bullets that you have to fire to get past the checkpoint, but make sure you're always shooting throughout the attack. The lowest I got was three shots fired. And that goes for the second part too.
