Typically, you'd flavor the syrup with fig leaves, or some people throw in even some figs, orange peel, cinnamon, cloves and sometimes anise. Also, as for the sugar, traditionally, chancaca (aka panela) is used, but it's just slightly less processed brown sugar. Other than that, it's pretty much spot on for one of our dishes, thanks for spreading our cooking guys, greetings from Peru!

Feedback from a Peruvian: The recipe is correct, the technique for the frying is also on the point. However, for the syrup... you don't use the juice of orange and lime, you boil the peel of an orange, fig and pineapple plus the sugar and others. Loved the video, thanks for letting everyone know the wonders of Peruvian food.

it was pretty good! although the best way to eat it is to squish a bit the picaron on the chancaca syrup so it gets as much syrup as possible

I'm from Perú and picarones are so difficult to make. my family once made it with only sweet portato and it takes a lot of time to get the dough (by hand). Ben is right, as a street food they use one hand for dough and one to serve. You should try others recipes.

Tip: put the batter into a piping bag, chill it thoroughly, pipe circles onto parchment paper, thoroughly freeze those circles, then fry them in not-so-hot oil. Like, 10 or 20C less than what you did with these, so the outside doesn't burn before the inside is defrosted and cooked. Not authentic at all, but it'll make the whole process so much easier.

I'm currently living en Perú, I've lived in Perú most of my live. I have no Idea how the batter is made,but the result seem very acuarete to Picarones. And i also call any ring-shape sweet food a Donut

This is VERY similar to our Sweet potato puff balls. The only differences is we actually press the balls in oil and let it become nice and crispy, and it is almost nothing in the middle but chewy on the same time, try search "地瓜球" on google!

I'm from Perú and its mixed with your hands, you have to hit it while doing it to activate the lifting process and then wait some hours till the mix doubles it size.

Try Polish "pączek"! (plural "pączki") I think they used to have a hole, but modern pączki are round and always have a filling. (Usually filled with jam, I think the most unique and iconic is rose petal jam, but can use strawberry or vanilla cream etc.) They are served sprinkled with powdered sugar or glaze and orange zest. They are usually eaten for Fat Thursday (holiday when it's okay to eat sweet and unhealthy food!) along with angel wings (deep fried, crispy, flat pieces of dough that easily fall apart when touched, also very good to try)

to shape them easily, take a bowl cover with muslin cloth and hold it tight from the bottom, it will kind of be like a drum. now brush some water over the hollow part on the cloth piece and then spread the batter like a pancake with hands and make the hole... now slide it off onto oil :) not sure I described it right. We(Indian-> Bundelkhand region people) make something similar, its called Bara, my mum does it too well. I will post a picture next time she makes them with help of a bowl and muslin cloth. Or you can pipe these like JALEBI's!

You should make loukoumades. They're kind of like this, crispy on the outside and airy in the middle once fried and covered with honey syrup, only I don't think they have potato and are made into balls ("holes") instead of rings. They're soooo good and I only get them once a year when the church by my house has a fundraiser.

What about a normal vs cook challenge? Mike, Barry or Jamie choose a dish (beeing able to research at home etc.) and ben or james have to make up a recipe on the spot (Beeing provided with various ingredients). The better/ more accurate meal wins

I just found your channel and I love how you dedicated a week to my country 💜💜💜 Lit my favourite thing about my country is the food. 😂 I don't like picarones all that much, but my dad loves them. I prefer "mazamorra morada" and "arroz con leche" (you should try making those!). You should try "papa a la Huancaína" too. Your channel is great.

Love the show. For the syrup you forgot Figo leaves :). They are very aromatic, and imprint a very distinctive flavor. Although, they are very hard to find. So as a Peruvian, I'm fine with your syrup version. Keep the great work!.

PI-CA-RO-NES siiiiiiiiiiiiiiiiiiiiiiiiiiiiiiiiiiiii. The syrup is not made of brown sugar but of chancaca ... less refinated sugar, and it needs fig leaves, orange peel, and cloves. By the way , we don't blend it in that way but we have to ... have to do it with our hands because it is the only way to get the exact texture later to be fried. And even the way we shake it with the hand is ... gez my arm hurts whenever I make this recipe, and usually we add some anise in the flour and a pinch of salt and a pinch of sugar. One more clue... we never use white sugar in Peruvian recipies unless we use it to decorate... powdered white sugar. Y el proceso de la levadura es diferente, es un tipo de levadura y también es un secreto para que salga correctamente. Secreto de familia. I have been helping my momo since I was 8 and now I have to do it by myself.
