Hmmm how do you find out what sells good in an area? How do you find out the profitability? How do you narrow down the options? Do you stick to certain categories or do one of each category? I am free of gluten, sugar, dairy, eggs, soy, corn syrup, carrageenan, artificial colors, flavors and sugars. I am focusing on gourmet chocolates, but I also want to make coco bombs. I just did a cake order last week because someone had an allergy and I am doing an order of cake pops also based on an allergy issue. I don't plan on making cakes anymore I want to focus on bite size products. Cakes just take up way too much of my time even though I do love to sculpt and work with all mediums. I want to get good at these chocolate turffles and bon bons first and add vegan meriangues and macrons. However I do know that the macron trend has gone by. I really really love my Madaleine and chocolate fusion. I guess I am just going to have to learn the hard way and just see what sells. I love cake pops but there isn't vegan and sugar free chocolate. I am not a fan of cupcakes because that's all they serve at my kids school and it's so basic!!!! BUTTTT that is what is popular.....and they are so much easier to make than cake. They are pretty much fool proof. The other day after a couple attempts I figured out the secret to using chickpea flour and quinoa flour and NO ONE NOTICED. If you use those the bake is instantly disgusting, but there are steps to make the taste fade away!! Maybe I am on to something?? I will see at my first holistic market next month :)

Yes, please more information. I would like to find a class to show how to tier. The proper way to secure the cake and the different tools needed. I am a home baker. Mostly baking cakes and cupcakes. My dream is to open a food truck to sell my cupcakes. Are there any classes you would recommend me taking to further my dream. I am taking a class Saturday with The Cupcake Experience for flower decorating. I am willing to take as many classes as possible.

Hi Janelle, I'm so encouraged by your insight and advice; a result of a culmination of your experiences as a cake artist and entrepreneur! I'm at stage three atm, and after finishing up wedding season, decided to discontinue offering cupcakes. Although they were a popular product, I didn't enjoy making them. I have worked as a fine artist for two decades, and when commissions for well decorated cakes exceeded my paintings, I decided to pursue that instead. I'm hearing what you said about the significance of your location impacting what you ended up selling more of - cupcakes. However having worked in two bakeries prior to launching my own business, I'm trying to avoid the bain of mass production. It takes away from my ability to produce custom crafted luxury cakes, and I feel it cheapens my business. Is it possible to still make a profit pursuing cake art without mass production, perhaps through teaching my technique and having an online school? Or subcontracting with other bakeries to just show up and paint/sculpt their cakes? What other avenues are there to explore to make profit that aren't in mass production?

Well, I’m actually at the beginning of learning to make cakes and baked goods, and I realized that I’m actually good at it. Moreover, I have so many ideas about making things better. But as I have no idea about what kind of future I’m gonna have if I choose that path, I find myself freaking out. My family’s paying a good money for my baking course and I actually don’t wanna let them down. Should I keep going? Will it worth in the future? Or should I do something else instead? Would appreciate whoever could help me if i should stay or quit🤍

Here's the thing... You'll never know what's gonna happen or what's on the other side of this journey unless you try. But you have to go all in. You can't pick and choose when you want to show up and be consistent. If you really wanna see this thing through and actually know if it will work out for you, you have to be willing to embrace the challenges (because there will be TONS) and roll with whatever way this journey goes. So, you either do it now OR you sit around and wonder what could have been. Just a thought.
