I made apple pie filling for the first time about a month ago. That was a messy sticky process! LOL. I don't even like apple pie personally. But I love to put apple pie filling in my oatmeal. So I just put it in smaller jars.

As the population ages people will have those issues. I already do as I’m in my late 60’s. But I have a chair on wheels that I sit on and I have a desk in my kitchen where I prep sitting down. You just have to readjust how you do things. I refuse to give up until I can’t sit lol. I’m still canning away. I’m not as fast as others but I get the job done!

I'm kind of surprised that NCHFP hasn't never reevaluated the headspace recommendation for apple pie filling. It seems like maybe it's something to do with the clearjel? Maybe because it's hot, then it cools while you're mixing in the apples and filling the jars, then gets heated up again? Normal cornstarch doesn't do that when you cook with it, but clearjel is modified to be able to thicken as it cools, get liquid again when heated, and then rethicken (which is why it works so well for home-canned pie filling). The way to beat the peeler would be to get one of those (manual) gadgets that press down on top of the apple and it cores it and slices the apples for you. I hardly think of it as a "gadget" its just a super simple (and fast) way to core and slice apples for kids or grandkids to dip in peanut butter. They're like $5 or less, but it's worth looking around for one that has "wedges" the right size for you.

Oh my... Believe me, my back fully sympathizes with your back!! I have chronic middle of the back pain and standing at the kitchen counter/sink IS a royal pain in the back side!! 😣 Anyhow, I also have been dealing with a TON of apples. I have a neighbor that wasn't going to take care of any of their apples this year and was told that I could come over and pick as many as I wanted... Not something good to say to me... 😂 I of course went totally overboard when I saw all those beautiful large apples and when I was finished, came home with nearly 4 bushels of those "things". I was seriously considering going back a few days later and pick more, since you couldn't even see that we'd made a dent in all the apples that were left... (I came to my senses and said HELL NO!) Thankfully, I had bought from Amazon one of these apple peeler, slicer, corer hand cranked gadgets... Since I knew that if I was going to stand there trying to deal with all these apples, I'd most likely not be able to do anything for the intimidate future... 😱 Other than whimper and wine... Going out on the back porch where I was storing these large crates of apples, so that I wouldn't have even more fruit flies in my house. I hate those pesky things!! I took one look att ALL those apples and my first thought when I looked at them was: Dang!! Someone please shoot me!!! 😲 It was first then, I realized that I was in way over my head! "sigh" Anyhow, I brought in a shopping basket load in to the kitchen to start to process, which didn't even create a dent in one of the crates. Figured out how that apple peeler thingy worked and started peeling, coring and slicing the apples. First disappointment with that thing was that it did not remove ALL of the core, there were still little pieces of core left in some of the slices and since no one in my family, not me, nor any of my adult kids like bits of apple core in our applesauce, pie or whatever, I had to go through every slice and pinch out the remnants of the core... A pain in the rear but, I was just making apple sauce and felt that it still made it easier on my back. Second disappointment was that the slices are very thin... works if you're making applesauce or apple butter but, not for apple pie... Next day, in pain, had to up my pain medication but... Oh well... Next project was apple pie filling. I opted to remove the corer/slicer attachment and only use the peeling function. Much better... That way, I could cut the thickness of the apple slices the size I want them and just leave the core along with the peels, to put in the pot where I was going to make apple jelly when I was finished with my apple pie filling! Works for me! I did not make the filling with any type of sure gel. (can't find that over here in Sweden) I was thinking about using corn starch but, know that it might react strange so, I just cooked the water/apple juice, sugar, and spices. Poured some in the sterilized and hot jars and then in with apples and more syrup, until I had the one inch headspace, which was a good thing to do even without the thickening agent, as it did swell anyway. I think it's the apples that swell, just as much as the thickening agent does... At least I didn't get any seepage while water bathing the apples with only the spiced syrup. I figure when I open a jar to use the apples/syrup when I'm going to make a pie. I can pour the syrup out from the jar into a pan, leaving the apples until last and cook/thicken the syrup with cornstarch! Don't think I'll reattach the corer slicer part to that peeling gadget... All in all, I'm still very happy with it! Well worth the $15 I paid for it from Amazon!

I just wrapped up my apple pie canning. I always cut the sugar in half and for the other half I use Allulose sugar substitute. I even use all allulose in my jams and jellies.
