My mom and dad canned so many veggies and fruits for our family of five when I grew up. I can still see them in the kitchen into the wee hours of the night sometimes :)

Karen this brought back so many memories, did this with my Aunts growing up. Tomatoes,okra,succotash,ect. I need to start doing it again. My Aunt Mildred had shelves in her large laundry room and put them there. Looked like a country store,Lol ❤

Oh My Ms Karen, nice okra. This was Mr Old Alabama Gardeners canned okra recipe, he isn’t with us any longer; he shared this recipe with Ms Wanda at Deep South homestead years back, and He emailed this recipe about 4 years ago to me. It’s a great recipe and fry’s up perfect. Good to see this recipe in circulation. God Bless Y’all

Karen frying okra after being canned as you just did, is your okra real soft. I like my okra to be on the crunchy side after frying in half meal and half flour ? Again I really like your cooking,I was raised up on food cooked the way you cook. Pop Jones is blessed to have a wonderful cook as you. God bless. ❤

I watched your video of your canning the tomatoes. They were so beautiful. After filling the jars, you put them in a water bath. However, I didn't see you do that step with your okra canning jars.

Yes, you can freeze it. Just wash it good, cut it up, and put in bags and freeze. I did it like this for years. ❤️😋

Hey sweetie, Bob and I never had okra before!! That’s living in the north east for you, not really common in this region!! Fried okra sounds delicious, hope you do a video on that!!! Now get some rest and take it easy!! ❤❤😘😘

Once it’s canned is it still slimy when cooked in soups/stews? I love fried okra. It’s right up there with fried green tomatoes and squash. You’re going to have some good eaten this coming winter… Thank you for sharing another canning video. Big hugs 🤗 ❤It would be nice if you could grab some take out for supper after a full day of canning.. it’s rewarding but it’s work… ❤

I'm in Minnesota and we don't have okra around here that I am aware of anyway. I was surprised that you don't have to do a hot water bath processing after the okra is put into the jars. My mom was in the Army (as a cook) during WWII and stationed in Georgia. She said that they had to prepare a lot of okra and that she didn't care for it as it was slimy. I don't know how they made it, but it being the Army it was done in huge quantities I'm sure, so the quickest way was probably not the tastiest way LOL!

I fry mine, and it's not slimy. Boiled okra is slimy to me, but Pop Jones loves it.

I always wash my okra first. I then lay out on a clean towel to dry a bit before cutting it up. ❤️

My grandma used to can foods. She used a pressure cooker for her canning. But my mom didn't follow her mom's example. She never owned a pressure cooker & she never canned food.

My mother rarely canned anything. She would use a pressure cooker either. My Granny was the one who canned.

She used 1/2 cup white distilled vinegar; but make sure it’s 5% vinegar, if not it will not be shelf stable.

Yes, 1/2 cup, but it does have to be 5%.

Is that okra water slimy? What is the purpose of the vinegar?

No, it's not slimy. The vinegar makes its shelf stable since it's a low acid food and is not pressure canned.
