I did my first raw pack seasoned beef last fall. I used powdered beef bouillon, ginger/garlic paste, pepper and dehydrated onion. The best fast food ever....on nights that I am not into cooking. I whip out a bottle of my beef, a bottle of my potatoes and a bottle of seasoned carrots....sweet Lord have mercy pretty fantastic...especially with a bit of tomato paste and Worcestershire sauce. Linda's Pantry is one of my favorite resources for learning how to can certain things.

IA about knowing about the breakage. I would like to see what it looks like in the canner as well. I've seen where some of my tomatoes may have escaped yet all the jars sealed.

Looks yummy. I’ve been canning beef also getting ready for the next shutdown. I like to use new jars for pressure canning since some of my family use silverware inside the jars even though I preach not to do that it scratches the jars.

Great canning video. Sorry about the broken jar. I know from experience how upsetting that is. Sometimes it’s the jars fault. Maybe that particular one had an unseen flaw. You did everything right.

I;m new to canning and need all the help I can get I retired last may so this year I started planting a garden again and canned my first squash today I have the ball blue book and just order me a 921 all American pressure caner my question is can you can ready to eat meals and also I couldn't find anything on canning squash in the ball blue book so I took a chance and processed it for 30 minutes from another show I watched would that be right I try to watch all your shows I love all your videos. Any help will be greatly appreciated. My plans is to start back deer hunting this year and start canning deer as well.

Hi Linda, Love all your videos. I have a question regarding Tattler Lids, will they seal using a food-saver Vacuum seal lid attachment? I don't have any of the Tattler lids and was wondering if you have tried to vacuum seal them with the food-saver attachment. Thanks for all you do. I recently saw another video where the Tattlers did NOT hold a seal when vacuuming air from dry contents after a couple of days/weeks. It's important to note for "newbies" that this method isn't really canning, it's just keeping foods that are already stored room temp fresher longer & keeping critters out

No, don't store jars with the rings on or stack them on each other it creates a false seal.

Jennifer R only thing i can think is I cooked with a ham hock and fat got under seals even though I wiped down with vinegar. I now have 14 jars sitting in bottom shelf of frig -most sealed but since two didn’t I opened one and it was sealed ( not huge swish aircwhen opened though)but am worried if will come loose so as soon as make room in my feeezer guess will put jars in freezer -hard for me as 1 person to go thru 14 quarts of ham and beans lol

Same thing as Clear-jel modified corn starch which requires heat & won't thin out in jars I think (like in pie filling videos)

I recently saw a video from someone else who said they've never found a good way to preserve zucchini because the liquid content in the squash is too high. I've shredded and frozen zucchini to "hide" in meatloaf, chili, vegetable soup, and and other recipes. I canned zucchini relish a few years ago from Linda's older Hot Dog and Hamburger Relish video. What I ended up doing this year was plant way more zucchinis than I'll need so I can give a lot away, (I'm expecting there to be food shortages for at least the next year due to most of the meat packing plants closing and farmers dumping milk and plowing under their harvests, with one farmer even having to destroy 6 million seed potatoes) and printed up a bunch of zucchini recipes so we don't get tired of eating it frequently. I bought a "zoodler" (spiralizer) so I can make zucchini noodles (and other stuff) over the summer which will allow me to save the store bought regular pasta for the winter time. hth 👍

Linda, have you priced rings, lids and jars lately. I couldn't find anything in stores and had to rely on amazon. I paid 70.00 for 4 cases of pints. They wanted 7 to 9 dollars for a box of lids with rings and plain lids were going for 4 to 5 dollars. This was in April/May

Target, Walmart, Tractor Supply, Ace Hardware all have jars at normal prices. Some special sizes are hard to find, though.

Stop blaming yourself for the jar breakage. It probably wasn't a temperature shock issue. It could have been a scratch in the jar! I remember the glass tea kettles? They worked great until the ONE TIME the inevitable scratches in the glass sitting just right on the burner caused the bottom to fall off when lifted from the stove, spilling boiling water all over! My mom got a severe burn from that. As jars age, they get scratched. Some jars end up looking hazy from micro scratches. They don't even make the 1.5 pints anymore, so they are aging if you're using them. :-)
