Thank you for this video! I refused to eat spit pea soup because I do not like green peas. Then, a cup of it came along with a restaurant meal and I tried it. OMG! I had NO idea what I had been missing. Absolutely delicious! It has been a staple of my soup making ever since. During lockdown I learned how to pressure can and make sure to keep a supply of this on my shelves. If you work outside the home, this is an ideal item to take to work for lunch. It is also a great gift to share. Hubby's expression when tasting it was priceless!

Habitant Soup is the Quebec-Canadian name of the soup. The recipe comes from Bernardin, which is the Canada’s branch of Jarden who owns both Bernardin and Ball (sister companies). We usually make it with yellow split peas who hold their shape a bit better. Glad you used broth. We usually use ham stock made from our easter or xmas ham bones. That recipe is hands down the best I’ve ever made. 🇨🇦🫙

yellow ones are good too loved Canada still wanted to see Quebec side. Big big country. I've seen about half at 52. Don't like outsiders much then. Yeah, us we got seats next to the kitchen doors. Always😅but I didn't care. It was beautiful there. I'll adapt or deal or walk away.

Habitants is a nod to the Quebecers of the past who ate this soup a lot. In Canada we also have a store bought brand called Habitants that carry split pea soup. If you’re a hockey fan the Montreal Canadiens nickname is Les Habitants or the Habs.

3 things about this video I LOVE. Split Pea soup! The Ball canning book is my go-to source, I will make this recipe. And meeting your husband. That sort of response and silly expressiveness is very much like my hubby on my videos. I Love it. Being able to laugh together is the BEST!!! Although I can't do many fermented foods because of a histamine reaction that causes me asthma symptoms, I do like your intelligent approach. It is obvious that you do your research. Thank you! Now to make this soup and use your method for canning beans without the farts.

Split Peas Soup is one of our staples; I never have leass than 6 quarts in the pantry. I use ham bones (left from the Easter and Christmas hams) to make ham broth just for use in canning Split Pea Soup. I also add a small bay leaf to each quart before canning. Nothing like a big bowl of Split Pea Soup topped with homemade garlic croutons with a generous sprinkle of Pecorino Romano over the top to warm cold bones in the winter!

I never liked split pea soup until my grandmother made it with a broth from boiling the roasted ham bone and leftover ham bits. I like beef broth too. That said, if you don't have broth, or even ham, you can add liquid smoke and sesame oil, and/or caramelize onions. If you cook pea soup a long time and it's usually too thin, add rice at the beginning. It'll cook away to nothing and thicken it up nicely. To make the instant variety just knock the pot over and you have instant spilt pea.

I have always used chicken stock to make split pea soup. I like it "pureed" and not chuncky, so I dont usually put anything that makes it look "unappetizing" into the jars as it can always be added to the stock when you heat it up for consumption. When it goes into the jars it is a "thin" texture, but when the jars cool is becomes a layer of thick peas at the bottom and a layer of broth on the top. However, when you warm it up it all becomes a nice smooth and "silky" soup.
