I so much agree with ‘the healing of homemade’. An example always in my heart, my daughter-in-law & son lost their baby just days before the due date, she was in so much pain, you can only imagine, she didn’t want to do anything, at first. One day I had her over and we just worked in my kitchen, cooking, talking, being quiet together, just spent all day together. She told me, later, that day helped her turn a corner towards healing, and getting back to her love of cooking for her family. So, my hope is for Heather to find herself, again, kneading her breads, feeding her family, learning to smile again, learning to laugh again, learning to embrace life again. Hugs.

At thanksgiving I boil the turkey neck with onions,garlic,celery,carrots to make giblet gravy. I take the onion,carrots,and celery and put them in my vita mix to purée then add it to either the gravy or stuffing. There is a surprising amount of flavor still in these bits after all that boiling

Omg I make a caramelized onion and balsamic hummus and it takes forever to carmelize the onions and make the balsamic reduction. THIS JAM WOULD BE PERFECT!! Add a couple spoonfuls to my regular hummus recipe!!! What a wonderful (and delicious) shortcut!! I'm so going to make this!! Thank you!! 💜💜💜

Oh my, I made this jam this morning and I couldn’t wait. Just had some on toast smothered with cream cheese. It is AMAZING! I’m going to get more ingredients and can some more for us and have enough for gifts. Next time will mix kinds of onions. That’s a great idea! Fabulous video. Made this a few years ago and just got back into canning recently. Just my two cents, but if people find the liquid to be too thin here’s what I’ve done: Strain onions from sauce; add to jars to 1 inch head space; add liquid to reach 1/4 head space and de bubble. Process normally. Worked well for me.

Now I just have to look for more room to store my canned products. Not much more room under my beds or in my closet. LOL. I wish I had a basement, but no such look in south Texas.

I just got a bunch of onions and my first though was, make onion broth. Then, I decided to make the onion jam along with the broth. I have a couple of roasters going with broth and I have a few pounds of diced onions ready to go for the jam. I am hitting up Aldi tomorrow for balsamic vinegar. Thanks for this post. Blessings 💕💕💕

Hi, Heather, I love when you turn on the camera. I would love to see you make the apple pie filling. I just made a strawberry pie filling and it is delicious. I also just got my first pressure canner and have been learning where my sweet spot on my stove is. I think I have it figured out and now I am ready to rock and roll. Thank you, thank you, thank you for giving me the courage to take the plunge. Being in the kitchen and sewing are very therapeutic for me.

The spots on onions could be mold or bugs. I use the brown peels for chicken soup if they're clean. Makes it nice and golden.

Heather, I just canned your Sweet Onion Jam and I can’t begin to Say How DELICIOUS it is!!! We had some beer battered fish and I used the Sweet Onion Jam on it and just about passed out! It elevated the fish and made me think of All the Fabulous Ways to use it in a dish! Thank You So Much bc I can’t wait to Try it on and with a lot of different things.

wooohooo so excited I was gift a bunch of onions was able to bag up 5 gallon zip loc bags full. You hitting your chopper reminds me of me, I have fibro ,RA , OA and carpal tunnel. BUT I am so excited for the onions and guess what we are making...thank you. I am going to chop mine in my food processor Your gadget I have been telling my family would be awesome idea !!!! Christmas gifts they will be. I am a single parent trying to be creative with Christmas gifts. I love making items to share. I made this for the first time about 4 months ago after watching your older video. It's amazing! I made 8 jars and I think there are only 2 left. Soon time to make more. I tried it this weekend as a glaze on a oven baked ham and boy was it delicious. Thanks for the updated video. ❤

One of my favorite sandwiches is leftover chuck roast, swiss cheese and onion jam made in to a panini. So good! Heather, have you seen any canning recipes for bacon onion jam? I have seen plenty of recipes for a single jar, but I want it on my shelves. It would have to be pressure canned for sure.

I've gardened, canned and dehydrated food for my family for 43 years and still do. Enjoy your videos and enthusiasm for so much of what I also love doing. I LOVE the Vidalia onion chopper.....it's good for a lot of veggies. I used to dread chopping onions!!! I've gotten mine at Bed Bath and Beyond. I buy 2 at a time now when mine get dull blades.

OH MY!!! Give me a jar of this and a spoon and I could eat this right out of the jar! I made a batch of this yesterday which was my second attempt in the past 2 days. Unfortunately I burned the first batch while caramelizing the onions and had to go back to the store for more onions! Thank you, Heather for this recipe! Oh how I wish hubby loved onions as much as me. :( I've made a batch of this but gave it as gifts along with a small sheet of ideas of how to use it. Your Aldi pan is so pretty and I bet it heats up like a dream being enameled cast iron. If your onion chopper ever goes on the fritz try this one from Amazon (sorry the font is so large, I don't know how to fix that) Vegetable Chopper Pro Onion Chopper by Bellemain Heaviest Duty. It is so much nicer than a standard Vidalia type chopper and easier on my hands since it is angled and has great attachments. I love how you give great basic instructions for canning during all your videos, Heather.

Heather, I've been watching your canning videos for just a little while, this past year or so, but I absolutely LOVE watching you can!! You're always so happy & so informative. You're such a huge inspiration to me!! I've been wanting to know the answer to the butter questions that everyone keeps asking about. If the butter solidifies on top of the jars is it still ok to keep on your shelf for a while? Plus, I was wondering how much water you add to your pot for the Onion Stock & how long you cook it for? Do you simmer it for a while or simmer & boil? Or do you have a video that I haven't found on making this stock? I've never made homemade stock before & I would really love to make some very soon. Thanks again for all of your inspiration! I feel like you're a close friend, except I can't ask you questions when I want. 😢 Lol 😊

I recently made a few jelly jars of the onion jam. The "syrup" is thicker than I thought it would be. Another time, I won't heat it so long or will add a little water. The "syrup" that was left is in the refrigerator. I've used it on the meat for several evening meals. Today was on pork steak. I didn't taste the vinegar but sure tasted the brown sugar. That was good because I don't care much for vinegars.

I had some jar lids that puckered last year. Now I know why. Now I don't make them as tight, I t is a learned skill. When you just start you don't know it all. Thanks for your vidios. I love all your recipe ideas.
