Tightening lids "super tight" is tighter than my method. "Finger-Tip Tight" works best for me.

I put 3 tsp cinnamon, 3 tsp ground cloves, and 3 tsp allspice with 3 cups water, 3 cups sugar and 3 cups white vinegar

You can definitely change up the spices you choose to include.

Always leave a bit of stem above the beets otherwise they bleed out

Thanks so much for the clear and well-rounded directions and insight! I'm wondering if you have something on the bottom of the water bath to hold the jars off the bottom? Or does that not matter as much? Many thanks for sharing.

I do have a tray with holes in that came with my canner. That sits in the bottom under my canning jars.

Yes, I do. I started out as an elementary teacher where I taught all subjects including science. Now I am a middle school math teacher, but I try to incorporate science into my math lessons when possible to help students see the need for math.

I'm just curious as to why you tighten down the lids so hard? I was always taught to tighten jars to finger tight only so jars down break in the canning process. I'd like to know your thoughts on this

This is the proper way to cook beets. So they don't bleed into the water.
