HAHA well, that is a lot of sugar. And It's ok. I have had "no sugar added" sorbets and fruit ices and the classic hot maple syrup on packed snow, and honestly, I'd rather plan an indulgence moment in my day for this. And gosh, the very notion of cayenne on melon... makes me want to go cut up my mango and try it with that!

Hey Chef John, I absolutely love your channel. I'm a butcher by profession, cook by passion, and for the life of me there's one cut that vexes me. Perhaps I am just born to not like it but I'm willing to persist. I can't cook center cut pork loin to my liking. The shoulder and back ribs I can do to perfection (usually braise/slow cook, or steam). And its not juiciness I have a problem with as I've tried brining its a tenderness issue. Please help! Is it just a personal preference as I just need fat and gelatin to enjoy my pork and I'll never be satisfied or do you have a solution?
