This reminds me of a friend a fellow Filipino caregiver back in late 90's. He also worked as construction watchman at night. He was under the table so his pay from the carehome was in cash and he hid them all in a suit case under his bed. He has free bed space and free food from the carehome. He use the money from the night job to send to his family. When he became US citizen he quit the carehome job after 7 years and decide to do full time security. We counted his money and he had almost 40 K. He deposited it in the bank and he was questioned by the FBI the day after. Instead of getting upset he was so proud that the FBI was questioning his income.

This man took his land and turned it into a money making venture; he farmed it for his family. He grow his own food. Any extra, he sells. Then he purchase anything he needs with the money he makes from selling his food. Notice they did not ask him about paying taxes. He is paying taxes on his income. He most likely do not have a hugh house. He said he lives a simple life. I believe he is telling the truth. He takes his pay and puts it in the bank.
