A little note. When you entered the tower where the rats killed the Soldier it is possible to place the touch just after you enter the first doorway. Then use ignifier on torch by Soldier and you will save him. You get the Saviour trophy and he won't alarm the others out of gratitute

some historical clarifications: I'm pretty sure the battlefield they had to go through in the beginning of this episode had to do with the 100 year war (between france and england) which is why Hugo found a shield with the english royal arms (the golden lions on red background) and the soldiers they encountered had noticeable english accents while the other characters have french accents (some are more noticeable than others)

Before watching the behind the scenes and everything, that was my assumption. That it was just inspiration from the time of the war and inspiration from the plague put into an amazing story.

Things similar to Somnum actually did exist back then; it was a substitute for tranquilizer guns. This one animal specialist - he used such a powder back in the 15th Century, but it was used on non-domesticated animals. He'd throw the powder on the animal, and the creature would fall asleep in a few seconds. But once the animal was asleep, you couldn't go to the creature immediately, since the powder was still floating in the air. Tgere's actually a lot of things that you're missing that you could do that are deemed "merciful" like that soldier that you chased the rats to, had an unlit torch on the wall to the right, could've shot it and basically protected the soldier from the rats.
