Probably with very directional mics, pointed downwards so you will cancel out the leaves rustling. The recording is (almost) in mono so it could be a single super/hyper cardioid or a shotgun mic.

Slump My guess is that they use a very high quailty camera-mounted mic. That can record sound of this quality as long as the enviroment is relatively quiet
