So he cherished every moment that he is alive and lives his life to the fullest. Shirou, on the other hand, has been given a second chance at life but he keeps blaming himself for letting the 500 people in Fuyuki die even though he couldn't do anything about it back then. Due to that, he is now constantly trying to save others even if that means throwing his own life away and he never actually live his life anywhere NEAR the fullest. Basically, Shiki values his own life while Shirou doesn't think his life even have any value

I think it's because this episode of carnival phantasm exists in a universe, where shirou had a saber route(because she named as main heroine in episode). And because of that he repeatedly says "i just wanted to make everyone happy" I think saber's route is the worst route, because in it shiro didn't get, that his ideals are shit. And it was never the point of FSN in any of the Route that "his ideals are shit", but the way he approaches them was incredibly unhealthy and dangerous and he was partially unaware of that. He confronts that in different way by the end of each Route, Fate/Saber Route included, just that the basis of his ideals remain mostly unshaken by the end of it, but he as a person and the way he sees them have indeed changed.

the main heroine route is basically what a lot harem protag are afraid of, like for instance ichika from I.S. throughout the anime he was shown as a dense protag, but further on if you read the light novel or some of the manga, it was shown that he was acting dense because, he was afraid if he chose 1 girl the rest will act cold to him, just like what happened in this episode, that's why people should start reading the manga or the light novel to start understanding the main character, don't just judge based on the anime, based it on the real source.

Shiki is just being a horndog, but Shirou, true to his character, genuinely wanted to make Saber, Rin, Sakura and Illya happy, and he just has so much faith in them. Shiki is spouting the usual crap and Shirou be all "No! They are all wonderful people! I know they'll understand!" ...Shirou, you naive little idealist. This is why I you're the best harem protagonist. I'd personally have made it so that Shiki's dates go to hell, while Shirou succeeds in his attempts, then a battered Shiki calls Shirou to ask to be picked up, but he's too busy with the dinner for the girls.

He wants everyone to be happy too, if you think otherwise then you probably have never played Tsukihime. Both are amazing protags in their respective stories who wants everyone to be happy but ofc Shirou takes it to a whole another level but like Shirou, Shiki saved all the girls in their respective routes by giving them love and cherishment even tho it cost him plenty of physical and mental pain. Both are amazing characters created by Nasu.
