These guys were awesome to meet at Blade! Both super nice. I picked up Aaron's (leading edge knives) Honayuki with white #1 core and it's phenomenal! Would 100% recommend

Too bad Murray wasn't available. He's a pleasure to listen to on white steel. Those bladesmiths are great ambassadors for the brand. Did you pick up a petty?👍😃

I have not picked up anything from them yet. I will spend the money at some point but right now we need to sell some things to keep paying for this channel.

Japanese steel deserve Wa handles. Purely personal preference.

Murray makes great knives and I’ve had many over the years. However, his prices have gotten insane over time and sadly I think you can get better nowadays. Or, you can get much cheaper for the same quality/performance. I find Shibata Koutetsu line to be nearly the same as Murray’s knives

"We take great pride in our heat treat". And then proceeds to tell the world that they don't use a temp controlled oven, rather they judge how hot the blade is by eye. Yeah....uh.....no. There are a handful of things done by Carter cutlery that are just simply not the correct, or should I say "best" way, but because of "Japanese tradition" they do it regardless. I love how Murray talks about White steel (shiro) as if it has some magical properties, when it is one of the most basic, simplest steels out there. The water quench, I don't have a problem with water quenches, but the fact is that engineered fast oils will, and I reiterate WILL, get the steel just as hard as a water quench without the risk of crack/distortion. The blade polishes are very lack luster, most of them look like they came right off the grinder with 400 grit vertical scratch pattern instead of a hand rubbed finish.

You know, I know of a lotta other Japanese blacksmiths that do it that way. None of us have to like it. I guess they feel like they've nailed it through the color. I totally get what you're saying. I completely get it.

Yikes. Those knives do not look great at all. I would have expected more from Murray and his team. Yeah there’s lots of better solo makers out there making some fantastic knives that are not only esthetically pleasing, but true performers as well. I think with Carter, you’re just getting the name.

I think they go for performance first. Some people like a more simple rustic, got a look with high performance.

Non of Carter's knives ever looked good. And he never touted them to be ever. He does brag about the scary sharp and ease of maintenance due to the way they're forge (the laminated method, easy to grind off outer layer of soft steel to maintain a flat grind that's thin as possible while retaining an edge due to harder core steel) and all his customers lives and dies by them as you imagine anyone who shelled out $1000 would. Though I do agree at that point when you spend triple digits on a knife how much of it is a flex vs performance/aesthetics? Though on second thought, that's no different than the iPhone racket. Yeah sure your $1500 phone will perform better than a $500 phone but how much am I paying for the logo really? No doubt Carter knives perform but it's much more niche but if I spot that Carter stamp on a knife at a garage sale for $20 bucks I'm 100% grabbing it no matter what it looks.
