hey Andy. A question: I noticed during knife work you were able to cut material with the same ease when going either up or down the handle. When I try to do the same, there's one direction (upwards to the handle) in which my knifes always seem to get caught up in long fibers and they seem to split out and damage the smooth cuts I had previously made. Is this a sign of dull knifes (they surely don't feel like it 🥲) or simply some wood types being more forgiving?

Depends on the direction of the grain! So I am going "downhill" both directions, but it is towards the bowl on the top, and away on the bottom. I'll have to post a grain direction video when I get the chance!

It's a relatively standard cooking spoon length, but you could say it is quite a large teaspoon
