im studying his method since the original , basically he keeps people entertained by tasting the bits occasionally and chopping the ingredients live so that people know what he puts in each sandwich. Entertainment and interest kept to the max

That is a kind of tuber, similar to potato, but it grows up only in Sicily. He jokingly says in the video that Unesco will shortly list it as part of world heritage :)
