When i add dollars and cents I get a fraction how do i get it to give me a regular answer.

Press shift then mode. Press 2 and it should be normal currency.

If I come up with a value of 300 (for example) and I want to subtract it from 600, where is the +/- key so I can just turn the 300 to -300 and add it to 600? There must be a way to turn a positive number to a negative number the way millions of calculators have done in the past.

If you want to use a previous value, use the 'ANS' key at the bottom. Unlike previous calculators you may be used to, everything is typed in then calculated, so the old +/- button for flipping the sign of the current x value doesn't exist. If you did a calculation that resulted in 300 and wanted to subtract that from 600, then type 600 - ANS.
