About OFF GRID with DOUG and STACY:
We moved to our 11 acres in 2011 from a large city in the Midwest with zero carpentry and farming skills. We live with no solar / wind power / public water or well. We share our adventure to a sustainable life, growing our own food from vegetables to meat. We post videos DAILY and they range from HOW TO to EVERYDAY LIFE and NUTRITION on the off grid homestead. We were city folks just like you probably and wanted to enjoy life and have more control over our food. We share food recipes as well as natural remedies.

Yes! I've had a cracked egg in my pocket. Funny memories. When we have a hen that likes to peck when getting the eggs from under her, we would use a milk carton to put over her head while collecting. We had that same milk carton out in the chicken house for at least 20 years-a staple in the hen house. Your hen seemed pretty chill, but using a carton (or cup or whatever) helps her not to notice and not get alarmed.

I always put a folded dish towel over the handle of the cast-iron pan when I take it out of the oven just to remind me that it's hot. I've been burned several times and boy do they get hot. It's just a reminder not to touch. I inherited mine from my mama, my grandmother and my great-grandmother. I have a 150 year old chicken fryer that was my great grandmother's, it's huge and yes its heavy but I wouldn't take nothing for it. Cast-iron pans are the best. Not only do they cook wonderfully but they're also beautiful to look at. God bless you real good. Love, Jude from Kentucky ✝️ 🥀 🐎 🇺🇸

Love my cast iron...so much more healthy to cook with! Also, in case it should help someone...if anyone is suffering from anemia and doesn't absorb the iron pills well...try cooking down some tomatoes to eat in an iron skillet. My mother stayed anemic growing up 80 yrs ago and an old doctor prescribed my granny this prescription! Lol. I dont care what anyone says...the old ways are still the best ways for the most part! It helped my mother greatly! I'm sure you get some iron out of anything you cook in them but, my opinion, he suggested the tomatoes because the acidity prolly helped break down more iron...not sure though. Hope all are staying Blessed and well!
@charitytanel8107
@charitytanel8107 4 жыл бұрын
What a fantastic tip, and agree with your conclusion the acid gets the iron. I switched to cast iron for this reason, too, it has helped me. Previously when we came from the country and switched to teflon non stick couting we all got sick, as in allergies, anaemic, skin rashes; so I switched back, even though now I have electric/gas.

You DO get elemental iron from cooking in cast iron....per a college chemistry professor and a former patient. (I am not a doctor.)
@phyllisschapiro7894
@phyllisschapiro7894 4 жыл бұрын
Also, take an iron spike or nail and stab an apple. Let it stay a while in the fridge. Then remove the nail and eat the apple (raw or cooked). The iron leeches into the apple. There you have it!! The acid in the tomato can really do a number on your cast iron. But anything you cook in cast iron will absorb some iron from the pan. That's why when many people only used cast iron, there was much less anemia around.

When I was living like this with no electricity, I bought a Battery operated Drill. I bought a nice whip and took the handle off of it. It had a flat piece of metal that was in the handle. @@josiegladysgardens9245 Leave a basket or a pail with a bit of hay on the bottom on a hook near the coop & you'll always have one when needed 👍. My Grandmother had a chicken coop attatched to her home (my grandfather built it for her) where she kept her chest freezers. It was my job to go & collect the eggs when I visited her, I was very young & I ran back to her one day & showed her what the chickens did to my hands & ankles (they were all bloodied) & she went & got a tool & clipped all their beaks & I felt so bad for the chickens, but I never got attacked by them after that. I love chickens, they make me smile just like her huge mass of turkeys. I would hide so they couldn't see md & when they all quieted down, I would say,"Gobble, gobble, gobble" & they'd all go off in unison repeating me & I'd crack up laughing 🤣😂🤭❣

YUM, that looks so good! Yes, I've forgotten eggs in my pocket several times. The worst was forgetting 2 or 3 of them in hubs down jacket pocket and then jamming my hand in the pocket in a back aisle of our big Walmart breaking them inside the pocket with still shopping to finish AND running into a friend -- standing talking wondering if/when I'd start dripping. Having to keep my hand in my pocket that was covered in yoke. 😂🤣😂

You have rekindled my love for homesteading. I am now in a tiny apartment but i have plants on my windowsill and in buckets on my patio. Im also searching for a small piece of property to homestead in New England. Anyone have any leads? Love you both, keep on inspiring.

This is a perfect way to prepare eggs. I'll definitely give this a whirl. I can make all 3 pans at the same time and let each of us garnish our pans the way we like them. Stacy what size or number of cast iron skillet did you use when baking your eggs?

Hi I recently found two small cast iron pans at the thrift store. They are beautiful. My so asked to take one back to college after Winter break lol . I'm so glad I watch you today because I love all the wisdom you shared about eating live food in each meal and the difference between omega 3 and omega 6. I would love to have chickens and I love how yours were in the crates 😍🐓 thank you for your channel.

I know me too !!! Travel in a class B van 21’ or homestead. I’m in my early 60’s and I’ve always had the traveling bug. Ain’t got rid of it. DEFINITELY would support farmers markets and farms i saw from traveling. In time Papa God Yahweh will tell me especially once I’m closer to being debt free from bad decisions.

I do love my cast iron. Funny you should mention about using a smaller pan. My daughter was just telling me that her favorite cast iron pan is a small one as well. Your recipe does look like something I would eat and enjoy, but I don’t eat meat / dairy or eggs, so I would just replace the eggs with another source of protein. Thanks for the awesome videos. I just love them! 💗

We use cast iron every day for most cooking on a Gas cooktop. Thanks for the suggestions. I use the Chefast Scissor with multiple blades to shred the green herbs. It makes it quite easy to prep herbs for topping you food. It comes with a safety cover that doubles to assist cleaning between the blades. Merry Christmas and Be Well. From NW State of Misery.

Stacy and Doug, I always put a splash of water in my eggs when I scramble them (along with some cooked Chorizo) but I've never thought of putting the pan in the oven. That looks delicious and I do believe that I'll have that for breakfast tomorrow morning! Thanks for this suggestion.

Tip: I've been adding about 1-2 tablespoons of salsa of choice per 2-6 to scrambled eggs BEFORE cooking; it cooks in, onion and other vegetables cook in - much better!!
