Couple tips, they don't start joining the task till you exit edit mode, and for the harvest task you can select what they harvest in the bottom right corner

6:51 actually knights were mounted chavalry well heavily armoured chavalry but nowadays knights are the classic heavy infintry well in moves but I understand what your saying as nowadays anyone believes what they see in me vids or games but it's perfectly fine
