Method-1 will work I am sure but Method-2 I am doubtful. A CAT5/6/7 cable has 4 pairs of UTP cores. A10/100 Mbps IP connection uses 2 pairs (Pin 1, 2, 3 and 6) to function, thus making 2 pairs free. While connecting a POE based IP camera, it is the unused cores that are used to supply power from a PoE Switch. So if we use all 4 pairs for 2 IP cameras (2 pairs per camera) there will be no unused cores left to transmit power. I seriously doubt if power and data will be sent on same cores. someone pls clarify.

For PoE to power the camera from switch you have to use pin 7 and 8 otherwise this cameras have to be powered separately

For POE to work you need pair 4,5 for + and 7,8 for - but with the latest POE IP AF cameras you only need pairs 1,2 & 3,6 for both power abd video 😉
