Out at a remote area of Northland's west coast I Free dive for some big Paua (abalone) and crayfish. Back on land I process the Paua and show my way of cooking the Iconic dish - Pauas and cream....

Good one! I wrap the pauas in a rag or half tea towel then beat with hammer on a hard surface til it's all mushy .then u don't need to cut it up .haven't tried the flour in p&c .will give it a go .streaky bacon is a good addition

Just blanch your live pauas in boiling saltwater for thirty seconds then into ice water tender as then just slice mince etc even bbq whole won’t ever b tough

Yep they are fairly easy to get, no deep dives required - Myself and Rob Fort got some at Te Kaha but I'm sure that you should be able to find some closer to Tauranga....Cheers!!!!

Instead of smashing the shit out of your paua to so call tenderise it, boil your water till its really boiling an drop the paua in whole for a minute an a half to two minutes an pull them out then you have soft tender paua then you can slice dice or what ever you wish to do with it

@@KerryFlowers I heard in NZ where black lip abalone has a piece of white-colour gut in the shell, which can be eaten raw and its soft, creamy and extremely delicious, they call it the "abalone cream/ butter. " They usually use it as a sauce to mix up with fresh abalone or lobster meat. Have you ever seen it before? I`m located in Perth and travel to S-W coast for green lip and brown lip, but never found any with this white colour gut, all just green.

Hi Kerry, Been enjoying your vids. Hints, Rub the black flesh of the Paua with a Stainless steel pot scourer to remove colour. Buy a alloy meat hammer and give each slice a hit. Buy a Wok Cook on gas. Dust the slices in flour- shake in a plastic bag. Stir fry in hot oil 30 seconds.the flour on the paua and oil are your roux [thickener} Add { prepared earlier in a bowl} sweet chilli sauce,garlic,lemon and /or lime juice,salt-pepper,fresh chopped green herbs of your choice, white wine splash, drop of cream if you like, another 30 seconds of heat-eat. Its also a great way to cook Crayfish, boiling Crays first is ruining them.split the raw tail and remove intestine,chop shell into chunks and stirfry the raw pieces with the meat and shell together, add your flavours and you will never boil a Cray again for a hot dish. Cooked rice to soak up the remaining sauce. safe paddling

Wow some great tips, the paua dish sounds pretty damm good but why take the colour off the paua?? As for crayfish I love the guts as a dipping sauce for the crayfish meat and pretty much don't add any flavours other than a little salt, but I'll give your way a go sometime... Cheers!!!
