We used to cut out the big piece of real dark meat on the bonitas when I lived and fished in the N Carolina...rest of the filet was good meat..you in Guof coast Fl?

Never knew that, I always thought Bonita were trash. where is the part to cut off the top or bottom loin or is it the outer portion?
