Correction, please. Bicol is NOT a city. Bicol is a region composed of six provinces (Albay, Camarines Norte, Camarines Sur, Catanduanes, Masbate, Sorsogon) in the Luzon group of islands, Philippines.

As a Bikolano, I feel the need to correct him. Bicol is not a city but a Region. It can be equated to a state in the US but with less political autonomy. Also, that is not Bicol Express because it lacks coconut milk and no one here in Bicol actually calls it "sinilihan". Although Bicol Express did not originate in the Bicol Region, it probably was named that because Bicolanos love adding coconut milk to dishes.

Dahil hindi nila alam tawag sa dish na to before tinawag nilang Bicol express kasi unang tininda ito sa train station going to Bicol..I'm not sure kung Bikolano/Bikolana ang nagtitinda nito..

That crispy lechon belly dipped in vinegar with chopped onions, garlic and chili will make you forget your name! I would also love to taste Bawang's version of Bicol Express without coconut milk.

I found this vid after watching him on a video from Eater. His voice seems to have been reduced here, and sounds strained? In the Eater video, I remember he smoked. I hope he is fine and takes care of himself. His food looks amazing.

There are of course many different ways of being Filipino and cooking Filipino food, but tomatoes do not feature prominently in most versions of Filipino cuisine, and they are not part of Bicol Express, a dish which, ironically, is *not* from Bicol, but from Manila, although it is based upon the traditional Bicolano dishes, "gulay na may lada" and "laing" (or "pinangat"). "Bicol Express" is named after the railroad from Manila to Bicol, and was invented by Cely Kalaw, a cook from Laguna, not Bicol, who was working in the Metro Manila area in the 1970s.

That is not Bicol express that is actually called "binagoongan baboy" or pork with sauteed shrimp paste.

Yes. We have that variation here in Bicol. My father usually likes it that way because last longer relative to Bicol Express with gata.

@@darkxangel15 thanks. I'm only aware of Bicol express with the usual gata, and the other one where the coconut milk is curdled and almost dried up. Oh, and my mom's bootleg version which is closer to gising gising 😂

NOT authentic! Why not just call it your own recipe instead of using a name of a certain dish when it is a completely different dish than the original? His Bicol Express is NOT Bicol Express. Bicol Express doesn't have tomatoes and it has to have a lot of spicy chillies since Bicol is a region in the Philippines where chillies is well-loved. Plus it has to have coconut milk since coconut milk is also used a lot in that region.
