The way the inks are being used it looks as though a good quality watercolor could have the same effect. Is that correct? I've not used inks before.

Good question! These are far more pigmented so will layer differently. Also, when layering some watercolor brands brands, a ton of water can reactivate the pigment already on the page and will muddy the colors.
