pumpernickel is pretty much any high density whole grain bread (wheat, rye, spelt, oat) with possibly seeds and/or nuts included. Often it is kinda dry or oily or splits off easily (supermarket bought ones). Pretzel bread is anything that uses "Lauge" which I believe is called "lye" in english, any bread like Pretzels have this shiny brown skin/layer after they are baked, which is a result of using lye (it also gives it a bit more crunch and a different taste)

@@Chris3sgonna pull a german and correct you on one thing: Pumpernickel is very specifically bread made from whole or broken rye, not flour. That’s why it’s so dense and crumbly. It gets baked for a very long time and has a malty flavor. If flour, seeds or other grains are involved or whatever, it’s just Schwarzbrot 🤓 guten Appetit

Fun fact about Brioche, despite being widely known as "Let them eat cake", the correct phrase is "Let them eat Brioche", not cake. Essentially they mean the same thing in comtext as both normal cake and Brioche are luxury food so to simplify it, they translate Brioche into Cake. Another fun fact, there are near to no evidence that Marie ever said the phrase, it was likely that the people who were conspiring the uprising made up the quote to make people angry because Marie didn't get attached with the quote a long time after her death.

As someone who used to work at a bakery I approve of this list. Personally I'm not good with rye breads they tend to be strong. *However* I will eat a sandwich using rye bread. I think for me there are many breads that are good stand alone and then there are breads that are good in other specific applications.

I don't see the basis for this. she was referencing a list that was put together beforehand, or looked up online the items when she was asking what a certain kind of bread was. could some of them have been mistaken? sure, but I'll say depending on what region she grew up in there's very real chances that some of them just don't make it into local markets or restaurants. source: I lived in germany for 10 years and the only reason I had access to things like hawaiian rolls, (grands) biscuits, and cornbread was because of supermarkets on american military bases. things may have gotten more global in the interim years, but I still doubt they're so common as to be as ubiquitous as in the US.
