I was fortunate to try västerbottenpaj last year while I was in Sweden for Midsommar and knew I had to try my own once I was back home in the states. I did a version last Christmas without a crust, but will definitely be trying your version this year! Västerbotten to me tasted like a funkier cheddar/parmesan hybrid. I'm gutted I can't get it here but used a combination of parmesan, sharp white cheddar, and (crucially) pecorino and it was a pretty good approximation! And for those that can't tolerate heavy cream (it me), vegan heavy cream substitute worked great as well.

X Priest was available at Christmas time at my Scandinavian market in Minneapolis - had it shipped to me in CA. (It isn’t supposed to be that way, ca is supposed to be progressive). Best quiche ever! No kidding..this cheese makes it! Just incredible!

Those crayfish are called yabbies or marron here in Australia, we reserve the term crayfish for our lobsters.

Wow that’s so interesting! Is there a certain type of lobster that’s a crayfish? I’ve heard the term marron but never yabbies, love that 😂😂

I made the Västerbottenpaj! The custard was fabulous but my other half wasn't thrilled with the texture of the pastry. I am going to try again with my usual pastry recipe. Thank-you and god dag.

My last crayfish party was on Vindö as a lucky exchange student in the late 70’s, complete with funny hats, bibs, brännvin, songs, giggle-worthy sounds (crayfish “juice” extraction), all while freezing my California teenager butt off with Swedish August rain. It was SO much fun!!! My host family didn’t bake Västerbotten paj but yours looks great. Earlier in the summer we did make Ostkaka (Swedish cheesecake) that was sort of like a soufflé, but maybe with some keso (cottage cheese)? Have you made it, Cecelia? I recall that it was really good, not sweet, possibly served with a drizzle of blueberry sauce. What a fantastic Swedish Summer we had, OD-ing on wild blueberries (every mosquito bite was worth it!), wild champignon mushrooms and smultron (tiny wild strawberries). Rode a fat tired bike all over the island, bought herring from the herring guy, made saft, went to a barn dance (old fiddler and accordion player) sort of learned Hambo, bathed in the Baltic, sunned on grant granite rocks, learned a lot of Swedish, and started a lifelong coffee habit. That sounds absolutely amazing!! Nothing beats Swedish summer! Västerbottenpaj is actually fairly new. It was created in the late 80s and become popular from the 90s onwards. I have had ostkaka once or twice and loved it! I would like to make it for the channel but since I don’t have much experience with it I’d like to find someone who makes it traditionally and do a video with them.

You need at least twice the amount of cheese to satisfy me. I usually fill up with cheese, and then top it off with that egg, milk mixture.

I tried to order Vasterbotten cheese - It’s a little expensive to have shipped. My Scandinavian shop in Minnesota, Ingebretsen’s, is going to ship me what they tell me is the best replacement, Priest XO, when they get it in their shop in October/November.

Americans, you have no idea about the taste of Västerbotten. Most Swedish cheeses are mild but *not* this one. It is incredibly… Pungent. So good in a quiche.

Hmm I don’t know. But any good cheese chop would know a good substitute and you can always sub with a sharp cheddar 😊
