Hey Tipper, I got my daughter and son in love to go to Adam's meat today. I told her to tell them that I heard about them from Tipper on Celebrating Appalachia and guess what? He gave her a pound of ground sausage and sent one to me too!!! Also, he gave us 2lbs. Of liver, heart rate etc. for the dogs. He is selling it for $1# for dogs. Cori and Austin should check it out for Olive. She wrote your name and channel down for him. Maybe he will give you something for advertising for him 😅. She got me a couple of filet mignons and her and Jo some Ribeyes, ground beef and of course she got us some hot dogs. Those are the biggest weiners I've ever seen 😅. I love your family and really do feel like part of it. Y'all are so down to earth just like us. Some days I watch you back to back all day long and love it 💕

Tray roasted beets salad When cool down, you chop the up, mixed with celery, onions, hard boil eggs and lots of mayo, is called Russian salad in Costa Rica, cool from fridge is delish!❤

I LOVE beet greens and roasted veggies. My hairdresser said a couple of months ago that she wasn't going to bother planting a garden this year because it's too much work, seeing that you can just go to the farmers' market and buy what you need. Today she said that she went to the market this weekend, and was horrified at the prices the farmers charged. She said that she left without buying anything but 3 small zucchini and is sorry she didn't grow a garden. I planted more than I have in the past and I'm grateful for that wisdom. Thank you Tipper for sharing your bounty with us.

Yeah, here where I live a bushel of purple hull peas unshelled cost right at $55 dollars. You get about 12 quarts or 24 pints out if it.

I remember suppers right from my granny's garden! I was born in 53 and I watched my granny make homemade biscuits , milk The cow and churn the butter. She was one of the best cooks I've ever eaten from.

My wife is Polish and we eat beets alot. She has a way of preparing them you might want to try ! After cooked, grate them on a coarse cheese grater (crazy messy of course!) and then put into large frying pan with a tbs of butter, tbs of sour cream, and a squeezed lemon. The lemon brightens up the colour. Mix and warm up and serve. AMAZING. Nice change from slices or cubes, and it gets rid of that "dirt" flavour Katie complains about it (my kids say the same thing !)

I was not aware that each beet plant only grows one beet. So this year, we're expecting 3 whole beets!

Your carrots remind me...when my son was a little fella, just 3 or 4, he loved watching the Looney Toon cartoons, Bugs Bunny being his favorite. He also loved carrots and once while shopping, he asked me to buy the Bugs Bunny carrots. I was confused and asked him to show me what he meant. He pointed to the carrots with their tops still on because in the cartoons, whenever Bugs ate carrots, they always had their tops on! So I peeled the carrot, leave the top on and he happily wander around the house, munching his carrot. I adore beets, regardless of the dirt flavor, but if you use plenty of butter....yummy. Hubby doesn't like them, but he does like pickled beets which I do not.

My dad called us kids "yayhoos" frequently when we were growing up. I love beets and yes, they do taste like dirt. Yum! I love brussel sprouts too.

My mother made the simple dish of macaroni and tomatoes. I've tried several recipes on line and none of them taste like my mom's. I don't know what she did to make them so good. It just look like she had macaroni and tomatoes in it. I wished I had asked her all those years ago 😊

My Mom made great Macaroni and Tomatoes too. I have been making them like she did for over 50 years just like she did. I add bacon grease to mine maybe that’s what you’re missing from making them like your Mom’s 😊

I've never had beets any other way besides pickled. I always like the young vegetables, except potatoes and tomatoes. Give me the baby carrots and cucumbers all day, everyday!

I like beets. My mother and Nana canned beets every year.We ate beets several times a week. Pickled beets were always on the table. I love them. I remember when my brother was a little boy, Daddy told him that he needed to eat more for dinner than pickled beets and bread and butter.

I did not appreciate beets until I was in my 40's and now they are one of my favorites. And it don't matter if they are roasted, pickled or just cooked and put in a salad. And even though I am from the midwest and our dinners look a little bit different, I sure do miss cooking up a feast. Now it's just me so I usually cook up something small and quick. But I sure do appreciate watching your videos, getting tips and ideas and of course just enjoying your company while I watch.

Tipper, OMGOSH! What a delicious meal you have made ❤. Beets are my absolute favorite no matter how there cooked. I’m the one that asked you how to grow beet’s, either seeds or an already started plant. I was never able to find beet plants anywhere in Northern Illinois, where I live. I was very disappointed ☹️. One suggestion I have for you is, when making picked beet’s, boil with the skins on. Cool and the skin will peel off so easily and it keeps the nutrients in the beet’s. Also, if you par boil your beet’s for roasting, the skins will come off easily too and roasting them won’t take as long. Your so lucky to have been able to grow your own!! I just know how delicious they are, homegrown 💕🙏🙏

I’m a 74 year old Midwest farmer son. When my wife was alive and our younger years we planted a large garden. We also planted some things with my mom and dad. Like potatoes and corn. I sure miss meals like yours. Thanks for sharing.

The only cucumbers Pop-pop grew were the old-time pickling varieties. Most of the time Mom-mom peeled and thinly sliced them, salted and drained the bitter juice and squeezed handfuls of the slices to get rid of more juice. She added salt, pepper, sliced onion from the garden and covered them with water and apple cider vinegar to taste. She served this salad cold from the refrigerator. I make a batch this way once in a while when I can get the right cucumbers in the groceries. Very occasionally, she would make a salad like you did, but she added iceberg lettuce and dressed it with sweetened salad dressing from the A & P store. I liked that as well.

Of course we like carrots and potatoes roasted also. It was so sweet to see your family gather together for supper. The babies are so adorable. 😍

We love roasting out onions also, really thick sliced and yummm , I just finished supper we had butterbeans , with all the veggies we work had to get the food that taste this way,, I’m so glad you make a great impact on a new generation with your cook book

We never harvested the parsnips til December, they need the cooler weather mature. This was in Northern Michigan.

Yeah, they should not be harvested before the first frost. The frost will break down the starches of the parsnip and turn them into sugar, thats where that lovely sweet taste comes from. In england they even make wine out of it!

Years ago my Wife and I would pickle beets. Later my Wife would heat up the beets with a butter sauce and serve them as a side. Always wonderful and one of my favorite sides. The hot beet pickling liquid would then sometimes be used to pickle boiled eggs which after cooled a little would continue to pickle in the refrigerator. The eggs were a great treat for an evening snack. Back in the 1960s and 1970s we used everything as many times as possible.

Love pickled beets. Not often I don't have them in the ice box. I'm a pretty good cook but don't know how to pickle beets so keep the simple coming too😉 roasted vegetables have a super flavor you can't get any other way. You truly had a feast. Wonderful

Busy day, but watching your video is a nice way to end it. I love the sound of crisp vegetables being chopped up on a cutting board. Not a beet lover, but I've never tried them garden fresh and roasted with a little honey. Sure does add some color to the plate though. Thanks, and God bless!

I also love the root vegetables cut up and roasted just like you did. My favorite other way to eat beets is to bake them whole, (just like baked potatoes) except I bake the beets until the skin actually separates from the flesh... It takes an hour and a half or more. I have my mama's pronged stainless steel baked potato rack and just stick them on that with a baking sheet underneath. I slice it in half (once it cools enough) and eat it just like that, hot out of the oven. It is so tender and sweet it pretty much just melts in your mouth.

Speaking for myself, by the time I was interested in some of the family recipes like my Aunt Fanny’s she was too old to remember herself. She said, Oh honey, I just made them from memory And I can’t remember how I made that. So girls, ask your Grandmas, Treasured Auntie and Mom’s now and write it down. Good food from the heart, home, and garden never goes out of style.

Looks wonderful! We never pulled our parsnips until after the first frost. It makes them taste so much better for some reason!! Brightest blessings!

The frost will break down the starches of the parsnip and turn them into sugar.

Ground beets in the food processor with some horseradish mixed in are delicious as well. Preserved lots of this and used as a pickle side.

One of the nice things about pickled beets, aside from that they taste good cold on a hot day, is that they do double duty. When the beets are all gone you can add the juice to your pickled eggs. The add a good flavor and dye the egg whites a pretty pink color.

What a delicious looking feast! I could founder myself on this food! I had some Lima Beans with a Ham bone cooked in them, Cornbread, Tomater n onion for 3 days in a row last week! I couldn't get enough of it! I love roasted Beets n Carrots also! Mmm, so good! I really like the taste of the Purple Carrots to. I forget what they're called but they are so sweet and tender! So good! I've also got some pickled Peaches my Aunt Laverne gave me! They're the best I ever had! Thank you Tipper for sharing this delicious meal with us! I love beets! Roasted, boiled, pickled, even grated fresh sometimes. They are earthy, but lovely.
