Ethiopian food is difficult to make it a commercial food like the American fast foods, but it can be a nice restaurant dish if it is galvanized with the culture of the people around there. lots of spices but little variety of major ingredients.

For the average American it is a culture shock. I thought the injera was some type of carpet foam the first time I saw it. I love Ethiopian food now, but it took several years of one of my best friends wanting to go to an Ethiopian restaurant every birthday. The same with Thai, Vietnamese, Cambodian, and Indian food. Didn't care for them at first, but now I love them all. It's like many of the immigrants in the United States say that it took them years to like American food.

This was the table of the prophets and the apostles, as tradition says. If it looks so different it is because of its antiquity. Civilization (as defined by the innovation of agriculture) is believed to have began on the Ethiopian highlands during the Late Glacial Maximum period of the last Ice Age (c. 10,000 before the present era.) Ponder the food, the crops forming the food, and the way the cuisine developed like would an anthropologist and you can see the antiquity of the cuisine.

The United States CAN have THE worst cuisine in the world although it still is a wealthy-ish country with many shops, restaurants and different areas. Seattle's cuisine is a notch above the American average as is New England's (where there are more cultured expensive specialty products or New York which is more worldly although the south can be controversial. Tex Mex is not very good although Texans can do great spicy grilled chicken ribs. Southern barbecue recipes are reasonably good although the south tends to have a lot of sugar in the food for some reason or another
