Ingredients:
For Bhature:
½ cup curd
½ cup semolina
2 cup all purpose flour
½ tsp salt
1 tsp sugar
½ tsp baking soda/ 1 tsp eno
1 tbsp oil
For chole masala:
2 ½ cup white chickpeas
1 tsp tea leaves + 1 cup water
1 tsp salt
1 cinnamon stick
1 black cardamom
1 raw potato
For homemade masala:
1 tsp cumin seeds
2 tsp coriander seeds
1 tsp fennel seeds
½ tsp pepper corns
4 green cardamom
1 mace
2-3 red chillies
1 tsp kasuri methi
1 inch cinnamon stick
or
use 2 tbsp readymade chole masala
For Gravy:
½ cup oil
1 tsp cumin seeds
1 inch cinnamon stick
1 black cardamom
2 onion paste
4 tomato paste
2 tsp ginger paste
2 tsp garlic paste
¼ tsp turmeric powder
1 tsp salt
2 tsp kashmiri chili powder
2 tsp mango powder
coriander leaves
green chillies
For tadka:
1 tbsp desi ghee
Jillian ginger
¼ tsp kashmiri chili
oil for frying Bhature
