And the substitute of scallops is exactly that. My wife eats scallops, but not shrimp. I also like using mussels, but they didn’t look great at the store that day.

You can use cooking sherry, which I’ve seen at most stores.

Egg foo young is always patty shaped I am not sure what you maid qualifies as egg foo young.

As these challenge recipes are usually dishes that I haven’t personally made before, I rely on found recipes to attempt them. The book I got this one from was a cookbook from the 70’s that I acquired from a relative. It’s in both Chinese and English, so I didn’t question its authenticity. It certainly was delicious though.

Quick and eazy. I have a qestion. If I were to use poultry would it have to be cooked before it is added to the egg mixture. or can it be added raw to the egg mixture?

I would say if it was ground chicken it would be ok, but if it were strips or chunks I would precook them.
