The blades aren't razors where it's a single edge. It's essentially two blades with varying degrees curve between the edges. Combined and you can do that. You just don't want to slide your hand along the edges.

It isn’t that hard to change them, I do it all the time and I’m only 15, the hardest part is pulling the trigger to get them out and that’s not really hard

It doesn’t hurt. I mean, yes it’s like a knife but it’s two edges so it won’t cut you. Even with a fresh sharpen

The blade’s 2 edges are meant to be sharp enough to allow high pressure concentrations on the edge so that the ice directly underneath the edge melts in a very thin, uniform layer. This gives an advantage in turning control, acceleration, and speed. They are sharp but if you compare the angle of a skate’s “knife edge” to a knife’s “knife edge”, the skate edge is almost at a 90 degree angle where as for a chef’s knife you’ll be at around 15-20 degrees. The large angle for skate edges adds a lot of toughness, similarly to how the large angle on a machete allows you to abuse it without completely losing functionality.
