the oil in pan , mostly used beef fat, with high temp. it color turns to black, but once you have it , I am sure you will come again and again. regarding hygine.. dear the oil temp. is more then 180C, i think no germs can alive at this temp.

I totally understand the concern and comments about the dark cooking "oil" Most "clean" world people are have cleaner indegiteon. This means fewer probiotic bacteria in them. So, the concern over this quite real. A regular american or european would have problems digesting this food. But this "oil" is not "oil" Its a broth or rendered juices. It boils and renders the minced meat dish to enhance its flavour. They change it frequently because even it is kept from burning, it will aquire a burning-bitter taste. I totally understand that tho the "advanced" people consider to have more knowlodge and good judgement. They have become, sadly, too smart for humanity. A human would understand what goes on in here.

Johny Cash u r rite mate, they usually use up all the oil and dont waste it since most ppl there are not that well off to afford good quality oil each day. Plus the man said it is partly oil (vegetable oil) and partly "charbi" or the goat fat which is used in frying. As for the color, the pan itself is black, hence the oil looks like motor oil :D......it is standard oil + fat. I myself am from India, never been there to taste em delicious kebabs. But I hope things are clear now John :)

A few weeks ago the Florida food inspectors inspected one popular restaurant. They found the kitchen where food was prepared, crawling with cockroaches. Thanks for this video clip. I am a Indian & very fond of foods. I wish one day I will visit Peshawar & will consume Chapli kebab. I wish my Pakistani brothers to enjoy with Chapli kebab. Our Bollywood show man late Raj Kapoor during his childhood enjoyed Chapli kebab at Peshawar. Even legendary star Dilip kumar also liked Chapli kebab.

Thats true, also even now, Kapoors and Khans parcel these kebabs from Peshwar to Mumbai. Obviously they are packaged in a way that they remain fresh.

I miss chapli kababs. I used to eat this a lot in Bahrain. Now I'm in India. We don't get it here. :-(
