Hey Charlie I am also from New Orleans, I am 60 yrs old and was born at Sara Mayo Hospital I know that Sara Mayo does not exist today but it is nice to see a young brother doing vids, my parents moved to Ohio in the mid 1960's and that is where I grew up but I love your vids. I lost my mom in 2014 and my aunt in 2020 because of covid. Both were GRTEAT people, my aunt was a Katrina survivor AND a breast cancer survivor. They would have LOVED to seen your vids. I would definitely snap off or cut off the stem on the string beans. For the chicken cooking it on a raised rack lets it get nice and crisp.
