I left a comment above before reading yours. Here in Piedmont, N. C., we also mixed turnip and mustrd greens because they were in the garden at the same time. Properly cooked, greens are delicious and nutritious.

Hi Charlie. I just discovered this and it brings back childhood memories. This was a favorite in the fall when the second harvest of greens came in. In N. C., we would have had plenty of smoked pork and used a mixture of turnip and mustard greens. Rice is not as common inland here, and we served it with white (i.e. navy) or lima bean. I'll have to try this soon when greens are available in the farmers' market again. Thanks so much.

You are rad, Charlie - most people don't actually cook from raw ingredients, but use EZ boxed kits & prepared stuffs - this even goes for *many* restaurants I've cooked at. Customers don't realize they're getting the same Sysco brand heat 'n serve meals they are getting at a million other cafés in the country. It sucks & I endeavored to change that when I cooked for a living. A true Chef can take fundamental ingredients & make a variety of excellent dishes - Charlie's customers know they are getting authentic, quality goods 😎 Btw, the Southern style you share is really something special, truly rare in the rest of the US - only in Louisiana can you find things like authentic boudin sausage & pickle meat, crawfish etouffee & gumbo. Anyway, keep it up, man - your content always takes me back to my childhood in Lake Charles & just the lovely aromas you can only get in the South.

I love that you use Prudhomme's Poultry Magic for things other than chixn. This entire line gives unique flavor you can't get anywhere else. Vegetable Magic is phenomenal on any sauteed veg, Meat Magic is fantastic (especially on bacon before you cook it!)😎

Sweet Charlie, That's my kind of eating. Collard greens with meat of your choice. I like ham hock. Got to season up them collard greens. Lay that Rice down. Making that cornbread in a cast iron skillet. Yes sir makes it good Krispy krunchy. Add butter fantastic meal. You made me want this whole meal Charlie. Going try to make this wonderful meal. This weekend. 10 * you hit the table for the food. And 10 * for the cornbread. That table gets a work out. The table might decide the runoff. Hahaha. Have a wonderful evening Charlie.

Ha! My Uncle would slap the table after the first bite family supper with my Aunt Loretta's cooking (oh she could COOK!) I tried it later on at home when Mom made biscuits & gravy (my favorite) & she scolded me for it 🤣! When I saw Charlie do it some time back, it took me a minute. I guess it's a Southern custom. Im gonna bring it back.
