My husband came home from a day of fishing w 3 good sized flounder. It was hot & he was tired so he asked me to take them to a fish market to get them cleaned. As I had NO idea about that, I watched your technique, sharpened a fillet knife & filleted them. I went a little deep on my first try, but after that, it went good. I took LOTS longer than you, but at 73, I do everything slower! My only concern is I’ll become the filleter!!! Thanks for the great video!

Wow! I've watched a lot of folk thinking they are good at filleting flat fish but this guy is the best of them all. No waste, real clean job and fast. Hats off to you Sir.

I bought a 9” for this lesson and it worked like a charm because it was sharp out of the box but keeping it sharp for the long haul is not always easy at least not for me.

I tried his technique. It worked great!!!! Easier then quartering it. Tried it for speed on the second attempt. I can now only count to 9.

thank you so much for this, my dad had bought flounder for us to cook for lunch and I had no idea how to fillet it. However, through this tutorial, some improvising, and the grip strength of which would bring fear to the eyes of most, I was able to get a decent fillet :)

Yeah... that's the way you do it. So many other sites show it in totally more difficult ways. Your way is the way I used to do it when I lived in Eastern Long Island... with doormats!

That's slicker than........that's really great. When I lived by the beach and caught flounder, we always just cut off the head and gutted them. Floured and fried 'em in the skillet, one side, then the other, flipped the skin back, ate the meat off that side, flipped it over and did the same on the other. Only left the bones. Flounder are amazing. Always loved 'em. Up here in the hills of Pa, our fish have bones that point in all directions. If I ever make it down to a beach again and catch a flounder, I'll try to remember that. Thanks for the video.

I just finished teaching someone how to filet a flounder. I end up with four separate filets. Two from each side. I truly wish I had seen your video 1st. I can now give them your option for two larger filets. Your video was straight to the point.

While Sean makes it look easy...it takes some practice and a VERY sharp knife. But with his method and practice, you can get some impressive results. I cut out the part where he spends 5 minutes sharpening the knife, in hindsight I wish I had left it in!

Chasin' Tail TV thanks again for posting and great point. I have no illusions that I'll be able to fillet a flounder in 15 seconds without a ton of practice. But, compared to the other videos this one seems to have the fewest cuts.

I haven’t filet a flounder/fluke in 15 years +. I just seen this one video and it’s like butter. works perfectly. I do recommend the sharpest longest filet knife possible. curved and able to bend. Thank you !!!

Nicely done!! I grew up in Huntington but now live on the west coast. Seeing a master fillet a fluke was good to see. I caught some nice ones on the southshore in 2013. Out here I target the King Salmon, halibut, spriped bass, and albacore. Did you know that someone transported 100 striped bass in a tank on a train from New Jersey and planted them in San Francisco Bay in the late 1800's during the gold rush? We are having one of the best bass seasons in decades. I miss the fluke fishing and little neck clams. Ed

Thank you kindly for the instruction!! My first time ever filleting a fluke, and it was perfect!! No speed, but definitely precision. The only thing that would have made it a bit “easier” is if my knife was sharper. Tight Lines! 🎣

Great knife skills! Always nice to see someone that knows how to do something extremely well. Very glad to see you did not wash the fillets in water. That is a very common mistake that basically degrades the quality of the fish fillets.

Damn good job on that filet. Caught 3 21"-23" fluke today on North Shore Long Island Sound Botched the first clean, but my 2 larger fish came out nice...Going to do a Misu Glaze on flunder filets in the oven. Interested to see the taste difference on white vs dark side of flunder meat. Thanks for the cleaning instructions brotha man!

That's impressive. You should include a demo after you've taken the fillet off showing exactly how you're positioning the knife along the backbone.

I kinda regret not showing the literal three minutes Sean spend sharpening his knife on a stone. Some people pick up a dull knife, then can't understand why they can achieve similar results. You should literally sharpen the knife EVERY time you clean some fish.

Nicely done, it is good to see someone making video that can fillet properly, rather than some butchers hacking away at fish leave a load of flesh on the bones. By the way, we pronounce fillet as fill it not fill ay. Thanks for the video
