Scone recipe: I doubled this recipe to make enough to feed us all.
Ingredients
450g/1lb self-raising flour
2 level tsp baking powder
50g/1¾oz caster sugar
100g/3½oz butter, softened, cut into pieces
2 free-range eggs
a little milk
handful sultanas (optional)
To serve
strawberry jam
clotted cream
Method
Preheat the oven to 220C/200C Fan/Gas 7. Lightly grease two baking trays.
Put the flour, baking powder and sugar in a large bowl. Add the butter and rub in with your fingertips until the mixture resembles fine breadcrumbs.
Crack the eggs into a measuring jug, then add enough milk to make the total liquid 300ml/10fl oz. Stir the egg and milk into the flour - you may not need it all - and mix to a soft, sticky dough.
Turn out onto a lightly floured work surface, knead lightly and work in the sultanas, if using. Roll out to a rectangle about 2cm/¾in thick.
Cut into as many rounds as possible with a fluted 5cm/2in cutter and place them on the prepared baking trays. Brush the tops of the scones with a little extra milk, or any egg and milk left in the jug.
Bake for 12-15 minutes, or until the scones are well risen and a pale, golden-brown colour. Lift onto a wire rack to cool. Eat as fresh as possible.
To serve, split the scones and serve with strawberry jam on the plain scones along with a good dollop of clotted cream.
Once the scones are cool, they can be frozen. To eat, defrost at room temperature and then reheat in a hot oven for 10 minutes. The scone dough should be slightly sticky to give the best results.
Sausage Roll Recipe: Again this recipe was more than doubled to make lots of sausage rolls.
Preheat your oven to 200C fan/400F
Ingredients
1 medium onion, finely chopped
2 pounds sausage meat
3 medium eggs (free-range if possible)
Ground black pepper, to taste
Salt, to taste
2 tablespoons flour, for rolling out pastry
25 ounces puff pastry , or shortcrust pastry - we used shortcrust
1 table spoon of mixed herbs
Fist dice your onions, mix together with the sausage meat salt and pepper and mixed herbs.
Roll out your pastry into a large rectangle and slice down the middle to make two parts.
Generously lay out your sausage meat along the centre and make sure it is well packed together, mix your eggs together and spoon or brush your egg mixture along one side of the pastry, then roll making sure the egged side is on the top, using the back of a knife, push down along the seem to seal. lightly brush the top of your sausage roll with egg. Cut your sausage rolls into your desired size, place in a non stick oven tray, if you do not have a non stick, butter the tray or use baking paper to line the tray. Bake for around 20-30mins or until the pastry is a light golden brown colour and the base of the sausage roll is cooked.

Sherrie and Mick remind me so much of my own parents. My mum was great at sausage rolls, scotch eggs, cheese straws, jam tarts and mince pies. Enjoy all your time with mum and dad. Your vlogs with them both remind me of what I am missing xx ❤ ❤ i lost both mine in 2018, 53 days apart 💖💖 It's a beautiful guest house, and i hope Bertie is fully recovered now. I add my raisins or dried cranberries to the flour mixture before I add the liquid. They look delicious. And no problem seeing the difference fresh eggs make to the dough colour.

I love the view from the kitchen window. I didn't know you could freeze clotted cream. Nothing beats fresh from scratch baking!

In the states we use a pastry blender. An old hand held tool with seven blades and a handle that makes short work of dough. Turns it into breadcrumbs faster and cuts down on the mess. LOVE, love, love my pastry blender.

I admire the handmade cooking and I used to use a pastry blender tool….but am terribly lazy about cooking now just for me so would use a Kitchenaid mixer 😊

I would love a kitchen aid blender, they are rather expensive though lol I’m not baking enough to make the expense worth it but I will get one in the future 😊

Ah yes in NZ a lot of people use a pastry blender . We don’t mix and roll so much either , just very quickly mix and bring together and pat out before cutting. Sadie’s looked delicious.

I still haven't gotten around to making Scotch Eggs yet, but sausage rolls look a bit easier! I never knew about putting egg on top to give the golden brown color. Super cool!

Hello, sweet Sadie! It's so lovely seeing you and your mum spending time together in the kitchen. I've never had a homemade scone before. I don't really care for raisins, and was wondering if it would be bad form to use chopped dates or dried cranberries instead?

Thank you ❤️ You can add anything into your scones. Traditionally it’s sultanas but whatever you prefer. You can also make the savoury by adding some salt and cheese into the mix 😋

🇨🇦❤️Thank you once again, Sadie, for a look into your world. I’m wondering what the words were to that song Mo and the other men were singing with such feeling. It looks like you were all having a good time, and what could be better than that? Your Mums sausage rolls look divine and I bet they tasted that way too. Your scones looked mouth watering as well, so I hope everyone sang your praises when they enjoyed the jam and clotted cream. Thank you, I’m not sure what the words are to that song but its beautiful. I will have to find out from Mo! I’m not sure of the exact way to put the jam and cream. However with clotted cream you have to put it first as it’s very thick and hard to spread 😊 thank you as always ❤️❤️

OMG…I think Ma Petherick’s sausage rolls could become a real habit with me! Nobody seems to make them here in New York, but I am going to start! The scones looked so good too! Sadie enjoyed your vlog. Have made scones for over 50 years so it was fun watching someone else. Oh dear the rain. When I finished Viewing and saw the rain I then saw it on my own windows in Essex UK.Like France it has been very wet here in Eastern England all coming From France. Not as bad as Bordeaux.though.
