I had an opportunity to make this recipe this weekend. It is so easy and delicious. This light cake like texture with the aroma of vanilla, citrus, and rum(I soaked my fruits in ~30g of rum). I bought some Panettone baking papers that held 500g of dough, 4.33" High X 3.35" ( 11cm High X 8.5cm). This recipe made 3 loaves. I used sliced almonds, candied peel, raisins, and lemon zest. I also used to homemade vanilla that was given to us as a Christmas gift from last year. I took out one of the vanilla beans and scrapped out the seeds and put it in the dough. Jo you are a genius. Cut the time in 1/2 and still produce a top notch Italian Christmas Bread. This weekend my family and I enjoyed a taste of the holidays a little early. Surviving quarantine just got a little easier.

It is panettone time again here and people again love the results. I'm making the single loaf and some 125 gram "panettonettas" in 7 cm paper cylinders. Thanks again Stay safe and happy holidays!

I just made two more double recipes, mostly for holiday gifts. Usual result: people LOVE it! Individual 7 cm cups are cute as cupcakes with all the panettone visual, flavour and aroma appeal.

Merry Christmas Jo. I am back reviewing your Panittone Bread recipe. I made it two years ago and it is as delicious as it is easy to make. I am not sure what caused you to go dark but I miss your videos and your common approach to baking bread. I am making this bread again for my holiday Christmas celebration. As I enjoy sharing it with my family, my thoughts will be that you and your family are happy and healthy. Cheers my friend.

I'm sure you've thought of this already, but a new dough hook might be in order. I worry about bits of vinyl (or whatever that coating on the hook is) getting into your dough, especially as you scrape the dough off the hook. I've found hand washing keeps the coating for longer. Apparently it can't withstand the dishwasher heat. Thank you for your marvelous channel!

Hi Mary, a new dough hook would be good, but I make sure I pick off any loose bits when I wash it, so I don't think we're eating too much enamel! 😉 One day I'll upgrade...I like the look of the stainless steel ones - Christmas is just around the corner and I have been a good little boy, so fingers crossed! 🤞 Thanks for the support...and the concern. I just made this using a soy substitute for milk and it is wonderful!! I'll try the adjustments for more starter discard. I prefer the term "spent starter." I suppose "non starter" is already taken in the UK. Thanks!

never made Panettone before always bought it, I am going to try your recipe tomorrow. I am using dove organic strong white flour lately my sourdough bread is not holding it ship and I think it is the flour is the reason. thanks, Joe.

Hi Al, that's interesting you say that about Dove flour because I've had problems with it too. Like you I find it produces a weak, sticky dough. I like Marriages, Matthew's and also lately I've been getting good results with M&S own brand strong white. Good luck with the Panettone, I've made 4 this week and they've all worked, so I'm confident you'll have success. Cheers Jo
