Cheesy Beef and Rice Casserole

Cheesy Beef & Rice Casserole
1 pound of ground beef
1 pepper diced
1 medium onion diced
2 cloves of garlic minced
1 pkg ranch dressing mix
2 cups of rice
2 cups of chicken stock
2 cups of shredded cheese
Preheat oven to 350 degrees.
In a frying pan sweat the pepper and onion for about 5 minutes or until is just starts to be translucent and then add the garlic. Stir for about 20 seconds and then add the dressing, rice and chicken stock. Stir it well and allow to simmer 3 minutes. Pour the contents of the pan into a 9 X 13 inch baking dish or equivalent if you don’t have that shape. Add 1 cup of cheese and mix through poking the rice down into the dish. Bake for 15 minutes and then add the rest of the cheese and bake a further 10 minutes. Allow to cool 5 minutes before serving.

Hi Colleen! I tried this recipe today - absolutely loved it! I cut the rice in half, and instead of bell pepper, I used green chili. We decided we are going to try it again with a cornbread topping. There are so many people who have difficulty with meal planning and preparing and you help those to accomplish good food. The schools have failed to recognize the importance of activities of daily living of which cooking and nutrition are a huge component. That is a terrible disease. I have a granddaughter that has crohns disease since a small child suffered for so long, parents had to fight for doctors to find out what she had. She in her first year of college and always suffers and was getting infusions every 3 weeks for many years. Now in first year of college with art. She works at a tea place and teaches art and teaches online and now working doing internet design, she is smart and is a worker. I pray for her with this disease. I feel for people with these diseases. Prayers for you. Take time to heal.
