Cheesy Loaded Potato Soup

One Pot Cheesy Loaded Potato Soup
2 1/2 pounds potatoes, peeled and chopped into 2 inch pieces
chicken stock to cover potatoes by 2 inches ( I used a tablespoon Better than Bouillon Chicken Base mixed with water
1 bunch green onions chopped including the green tops
2 garlic cloves, minced
1 containers our cream
1 package shredded sharp cheddar cheese
1 package shredded mild cheddar cheese
1 tablespoon Justice spice (add more to taste)
1 teaspoon garlic powder
1 teaspoon onion powder
1/2 teaspoon Tony More spice (add more to taste)
1/4 teaspoon black pepper
chives
In large stockpot, add potatoes, green onions, garlic, and seasonings to pot. Bring to boil. Cook 20 to 30 minutes or until potatoes are tender. Smash potatoes with wooden spoon and then immersion blender. Leave some potato chunks in the soup. Add sour cream and cheeses and cook over medium heat. Taste to see if you need more seasonings. I added more Justice and Tony More Spice. You can add cooked bacon that is chopped if you desire to. Stir throughly. When I serve it, I add more mild cheese on top and top with chopped fresh chives. Enjoy.
