You nailed it, thanks Courtney. Absolutely delicious dinner, and appreciate your continual great cooking technique, best cooking practices . Ricer idea for potatoes - check, I'll be using that again (though no mixer, just turn-stir it up!). Garlic at end of saute so as not to burn it - check! Warm milk (and some heavy cream) & butter for the mashed potatoes - check! Not just a side dish, can I tell you how I turned this into a one-skillet dinner? Using my largest (14") cast iron skillet, put the creamy potatoes as the base, added a good layer of Swiss chard braised then finish-sauteed in oil & garlic & s&p. Then a good layer of cheese and andouille sausage (andouille for a smokier flavor). Yeah, love Italian sausage though wanted to try a variation using some all-natural, no nitrates locally produced sausage I had in the freezer. And, the Swiss chard was excellent in this, had to use it up as I had a double delivery of it toward the end of the season here from our local CSA far-share. Only slightly more involved than your original recipe because of my addition of a greens layer. The creamy potatoes & greens took care of each other nicely, and the cheese & sausage on top made it fantastic altogether. Family loved this dish, and we'd make it in some form again, side dish or main. And thanks!

+Sophie Pentland Really anything you want! You could serve it with simple grilled chicken and veggies. I always serve mine with my Mayo Chicken recipe and some steamed broccoli. I think that is what I am going to make for dinner. But will put my own twist to it. My daughter is a vegetarian and my youngest son is not a fan of Italian sausage. Hmmmm, going to get my creative juices going.
