I kind of stumbled on Dr. Lim a few weeks ago....so much of what he spoke about really resonated with me in so many ways ways and topics. I have been eating high fat low carb for several years and find I have not arrived at where I want to be, so I am doing plant based and struggling to undo what I have engrained so deeply into my brain. I truly appreciated this video and will probably end up watching it again to reinforce. You're a cool guy Dr. Lim! Thanks for the help :)

Dr. Lim I need some help understanding how oatmeal, and pastas are included on the caloric density chart in the 600 range? I've done the math and they fall in the numbers of 1700 instead. What am I missing?! Also how does the caloric density of fresh corn vary so largely from popped popcorn? Lastly does dehydrating your own fruit change the caloric density like fresh fruit vs. dried fruit like you've mentioned? Thank you for helping me understand these concepts!

Chef AJ I have a question please. I follow a Whole food Plant Based diet, Limited salt, Oil and sugar, very Limited Processed food and very Limited Animal Products. I would like to know if what I eat for Breakfast is Healthy. I Mix together. 1000 grams whole rolled oats, 100 grams Sunflower seeds, 100 grams pumpkin seeds, 200 grams Chia Seeds, 200 grams Ground Flax seeds, 100 grams Ground Sesame Seeds, 100 grams Desiccated coconut and 100 grams ground Poppy Seeds. In a bowl I add 6-8 dessert spoons of the mix with ½ a cup of frozen Berries (any Kind, my favorite are Cranberries or sour cherries) 1 teaspoon sugar and moisten well with any non dairy milk. (I use soy or almond). I Refrigerate for 60 minutes to allow the Chia seeds to absorb the moisture. add a little more milk and then I eat.

@@CHEFAJ Exactly. Mine are bean with some Mozzarella. But you know, vegans hurt the movement more than they help. That's because no one sticks with it. Arnold is back eating steaks. Vegetarian is much more doable and rewards the environment.
