Another variation of this recipe is instead of fully boiling the potatoes, you boil them only for 10 or so minutes, take them out, let them cool down and cut them in circles (around 1 inch in thickness/or however thick you like them). Then heat up a skillet (or even better a cast iron), add the melted butter with garlic and let the potatoes cook in that until crispy edges form to your liking. Two-three minutes before removing the potatoes, add your dill so that is also crisps up. My family is of Russian descent and I practically grew up on these potatoes alongside with chicken cutlets. And now your video 100% made me go out and buy potatoes just to make this recipe.

Potatoes and dills is awesome. In Bulgaria we saute/fry baby potatoes (fresh harvest - only in season) and dill. Amazing!

We peel the potatoes and leave them whole. Also, we crush the garlic at the very end. But every household does it differently.

Tried it with olive oil instead of butter. Didn't have dill so I used green onions. It was tasty and so easy. Thanks for the concept.

You also can take very small potatoes, peel and cook them and when they are ready drain the pot, throw butter and dill inside and shake it for some time, about 10 seconds. It will be evenly covered in dill and butter, a little bit mashed on sides, but still solid, and because of size it will keep all the taste

I've had these a lot!! So simple and so good! You can use fresh baby potatoes to kick it up. Another way is to make a dill cream sauce for the potatoes by boil down some proper cream (e.g. heavy or whipping cream). _Very_ dangerous stuff, haha. I don't have a recipe on-hand but I see some "ukrainian style cream dill potatoes" in google and they sound about right. Lots of varieties and tweaks out there, and they're all good. But the basics are dill + cream + potato. If you like the sound of that cream dill sauce, check out Ukrainian beet rolls, too. The first time people encounter them, everyone's always like "I dunno" but then they eat one and are it changes to _"That. I want more of that."_

I'm Chinese, and you may feel a little intimidated by this, but sometimes we like to put dill from the garden into our dumplings; not as a herb, but as a "vegetable". That is a lot of dill, but trust me, it does not taste like pickles. It gives the dumplings a fantastic flavor! I strongly suggest that you try it!

As a Russian, I was a bit surprised with this recipe:) May be it's changed a bit in american environment, or it may be regional option (I mean the region of Russia). We usually use new potatoes, scrub it with a knife or a vegetable brush, boil and after draining pour with butter melted with garlic or just put bits of butter on top of potatoes in a bowl or pot (some people prefer it without garlic), and then put dills and finally mix everything shaking it up. Never mash it. But I think, the taste is very similar. Actually, it's really simple and delicious)

M-m-m, that's a lotsa butter, Chef! I do something similar with new potatoes, but I use fresh chives instead of dill. With dill, chives, or cilantro I tend to use my kitchen shears and cut them fine.

Part of the pro mentality is learning from everyone and being able to keep the good and discard the bad. People who pull rank in the kitchen are not pros, haha. I don't mean discipline, but I mean "you're the subordinate and I'm the expert and I didn't come up with this so it's garbage" kind of thinking. Conventions are only good if you're using them as reference (like x cups of water per y convention), and not as hard-limits on what you can do with food and maybe even preventing you from learning a better way ("searing has to always come first to lock in the juices"). Plus it's boring

Yeah the skin is semi permeable and the salt is dissolved in the water. Try boiling a skin on potato for an hour and you'll see. It'll be super water logged because water can get through the skin.
