I adore Seth and cooking segments. You can 100% tell that he is NOT interested in cooking anything, he just wants to eat. He's like a toddler "helping" 🙂 Also, much love to Rick!

Rick's videos of him cooking in Mexico (available on the Food52 and Babish channels) are so well filmed and produced, with not only great work in his beautiful cocina (kitchen), but gorgeous exterior shots of Mexican markets, restaurants and general scenery. His recipes and techniques are explained in good detail, very approachable and delicious. They are so much more than he was ever able to do for BA. I highly recommend watching his videos, and of course, buy his book if you want to make some great Mexican dishes that go beyond the basics.

I'm so happy how Rick debunks the myth of 'authentic' recipes. So many people confuse authenticity with how their mother/grandmother/aunt or other people in the town they grew up made it and think it's the 'one true way'.

I partially agree with you and Chef Rick. I think the problem is that people conflate "traditional" with "authentic. " I think it's important, not just for us Mexicans but for all cultures, to keep their food traditions alive. But it's also important to not try to keep food traditions locked away in a little box unable to be retouched or played with. Let's take these tamales, for example. Brown butter and pecan isn't a "traditional" filling (although they sound fantastic), but there's nothing "inauthentic" about them. Because where does the gatekeeping end for authenticity? There's a Mexican bakery near my house, and they make sweet strawberry and sweet pineapple tamales. Neither strawberries nor pineapples are native to Mexico, and the ancient Aztecs would have had no way of getting ahold of either of them? Should we stop making them because they're not authentic? Of course not,.

​@@billyeveryteen7328 If you're judging by Aztec roots, sugar, wheat, rice, onions, garlic, limes, oil, pork, and beef are all not native to South America - they were all brought by the Spaniards. How many years must go by before something becomes accepted as 'authentic'? I say if a Mexican cooks something, it's Mexican food.

Rick was 100% being polite. Culture difference? You don't go to someone's house and correct them on what he probably considers a minor error in front of a million people.

Dessert tamales are _woefully_ underrepresented in the United States. One time we were near the playas de Tijuana and came across a dude selling sweet tamales. Let me tell ya that fresh warm tamales made with juice-sweetened masa and filled with pineapple compote are little husk-hugged factories of happiness.

I've been following Rick's cooking for a while, and his passion for food is so infectious. I love his attitude toward "authentic" food. When I started cooking I had a similar view to what he described; I wanted to find the "authentic" versions of so many dishes. Over the past 20+ years I came to the same conclusion as Rick. There is no "authentic" food, just everyone's take on it. Some are bad, some are good, but it's all down to what you can get when.

I was testing some small devices at my job while watching this video. I saw Seth burn himself before taking a bite of the freshly made tamales. And I found my self blowing on the device in my hand to cool it down or something, like an insane person.

CORRECTION: Cocina is pronounced like ” co-see-na”you pronounced it like an Italian word by making the c sound like ch. also, cochina is already a word that can means “dirty girl”

As has already been mentioned the word cocina is pronounced “cosina” with an s sound which means kitchen. The way Seth was saying it is “Cochina” which in Spanish means dirty or dirty girl. Seth Meyers, your pronunciation is burnt! 😂 but still love ya

I always think ppl that don’t know the difference between Romance language particularly Italian/spanish confuse certain words (like Seth did with Cocina) or when ppl pronounce Dulce (but pronounce it with the O sound instead of the U because in Italian it’s the o.

I heard about Rick’s book on NPR a little over a year ago and have made over two dozen dishes. They have all been amazing. Correction: Seth, work on your pronunciation of the word, “Cocina.” No one wants a cook book called, “My Dirty Pig” which is what you were saying.

"Cocina" is pronounced coh-see-na. What it sounds like Seth is saying, co-chee-na (or cochina), translates to 'filthy pig.' I think he's mixing up the Spanish "cocina" with the Italian "cucina." I don't think Rick's book is (only) about the pork in his kitchen.

Seth have you ever tried to put on the best holiday experience for your loved ones during a lot of controversies going on at the time as to what happened to grandma? A pure Indigenous friend to the family warned me well ahead of time how problematic that could become. Looks like Late night with Seth has some good suggestions on how to cope with stress during such times.

I can’t any more. Seth is reading the title of the book in Italian. “Cochina” is dirty or messy in Spanish. Mi Cocina (my kitchen) uses a soft S. Like in Cancer. Please use this in corrections!!!!😊

Same truth in China, there's no such thing as fortune 🥠 cookie in China or Asia 😅 I tried Southern California tamale, it was like eating a pase with something in the middle. Ok, I'm bias 😅 I like the Chinese gluten rice parcel shaped like a pyramid, with mushrooms, walnut, lotus seeds, meat in it. I said Im bias😶 towards other cuisine

I will be getting that book…but dessert tamales are a strangely kept secret. They are almost non-existent, in texas. I hate it here. texas is an evil, ugly, awful place to be trapped.😡😡😡😡😡😡😡

I've only had dessert tamales once here in Texas at a restaurant but never have seen them again. Too bad because they were SO good. I live in Texas too and hate it for many reasons. So you're not alone.

Not really worthy of a correction, since so many Americans (even native Spanish-speaking Americans) do this, but I really hate that people say "tamale." The singular of tamales is "tamal."

Not a lot of Mexicans know you can make sweet tamales? The trouble with pochos is that they think they know Mexico and they don’t. The Mexican tradition is tamales dulces con atole. That cinnamon toddy and butter pecan tamale is 100% American. Embarrassing
